25.01.2022 Our wine list is a little unusual in that it is handwritten on parchment in a beautiful leatherbound book from Tuscany, an item made by hand with love and care in small quantities, just like the wines recorded in its pages. . This book is a living artifact that will evolve over time, with old references crossed out and newer ones being written in all the time, a testament to the ephemeral beauty of a certain type of winemaking, and a record of a wine list that changes regular...ly out of necessity as the the wines carried in the salon are not mass-produced (we sometimes have the only bottles available in Melbourne), so what is there today will be gone tomorrow, a dynamic kaleidoscope of discovery. . 23.01.2022 Weekend tasting notes, prepared for you by Vianney and the team: Food -- Goose Foie Gras by J. Grolière, from Périgord, Dordogne In 1960, Jeanne Grolière dedicated herself to making conserves according to her family traditions in South-West France. She recreated, in her own kitchen, recipes handed down by her parents and grandparents, and sold them herself at the local market. Eventually, word-of-mouth demand for her incredible products grew and she expanded, with her husband..., into a small workshop and later, now with her sons, into a modern production facility, where the products are still lovingly made from the same recipes and in the same traditions. This incredible block of goose foie gras is smoother than the more commonly found duck versions and has a subtle, buttery flavour that goes perfectly with toasted sourdough bread and caramelised onion jam. Wine -- Le Chenin Dailleurs, François Chidaine (Chenin Blanc) For the wine match, instead of going with a classic sweet wine recommendation (traditionally a Sauternes), we have chosen a less obvious but no less mind-blowing Chenin Blanc option. It is made by François Chidaine, one of the finest Chenin Blanc craftsmen working anywhere in the world today. His biodynamically managed vineyard is actually based in Montlouis in France's Loire Valley, where his reputation among wine connoisseurs continue to grow, but he sources the Chenin grapes for this particular wine from Limoux in South-West France where the warmer climate and southern soils combine to make the wine more intense. White flowers, white peaches, yellow plum and a hint of lemon zest with a chalky texture make this a truly unique wine that goes especially well with the rich, creamy texture of the goose foie gras. 10.01.2022 Happy Bastille Day! Vianney here, hoping everyone is celebrating with style. I personally cant think of a better day to open the masterpiece from my parents' vineyard in Bergerac. This wine represents the quintessence of my fathers winemaking philosophy and the passion that we try to replicate every day at V.... It is the 2002 Domaine de Grimardy "Revelation" Montravel rouge (Montravel is an appellation just east of St Emilion and next door to Pomerol), made with grapes from 80-year old Merlot vines (85%) and 20-year old Cabernet Franc vines (15%); green harvest, slow and natural vinification in tank and malolactic fermentation in oak barrels for 430 days. And of course, it's been aging for eighteen long years quietly waiting for the perfect moment. I could talk about it all day but words cannot express how moved I am by this wine. I am so far away from my country yet feel like I am at home right now... Dont tell me wine isnt magical! We will see you guys on the other side and I am looking forward to it!
