08.01.2022 Homemade gnocchi anyone?! While we love spending time outdoors and showing you all our favourite walking tracks around the world, lets not forget what our company also stands for: good food! We have been trying some of our old time favourites and these gnocchi are always a winner, and very easy to make. Why not give it a try and share a good Italian inspired meal with your friends and family. The recipe can be found below: - 200 g plain flour - 500 g waxy potatoes, peeled -...Salt -175 g unsalted butter -Freshly ground black pepper - 1 handful sage leaves - Extra-virgin olive oil - Freshly grated Parmesan cheese - Spread the flour out into a rectangle on your work surface. Steam the potatoes for about 15 minutes until cooked through. While hot, pass each potato through a potato ricer so that it falls evenly over the flour on the bench. Sprinkle the potato with salt. - Melt 50 g of butter and drizzle it evenly over the potato. Using a pastry scraper, work the flour into the potato little by little until you have a firm dough. Knead the dough gently for 5 6 minutes (the timing is very important). Divide the dough into quarters and roll each piece to make a long, thin sausage about 1 cm in diameter. Cut each sausage into 2.5cm lengths. Put a buttered serving dish into an oven set at about 150C. - A large, heavy based, 6 cm deep baking tray is perfect for poaching gnocchi. Fill the tray with water, then salt it and bring it to a boil. When the water is boiling, raise the heat and quickly slip in all the gnocchi at once (if the tray is large enough to take the gnocchi in a single layer), then reduce the heat so the water isnt too turbulent. Allow the gnocchi to cook for 1 minute after they have risen to the surface, then skim them out and put them into the warm serving dish and season! Want more recipes from us? 01.01.2022 We are thinking of you and miss our WGA family in Europe this year. We have enjoyed the yearly highlight of the lavender fields in Provence. This left us so inspired that we have gotten creative with the remaining lavender and have come up with a delicious lavender biscuit recipe for you all to try out while some of you are still under lockdown over in Australia! Makes about 30 Ingredients:... - 100g butter - 90g sugar - 1 egg - 1 TBSP lavender flowers - 200g self-raising flour Instructions: Cream butter and sugar, add egg and beat well. Add the lavender flowers, mix in well, then add sifted flour. Put teaspoons of mixture on a greased baking tray and bake in a preheated oven at 190C for 10-15 minutes. Enjoy and tag us if you make them!
