15.01.2022 B R A I N I A C Check out these five ways nuts support brain health via the Nuts for Life website - because they say walnuts look like brains for a reason 1. Nuts contain B-group vitamins, necessary for the production of neurotransmitters and cell structure in the brain. 2. Nuts are rich in polyunsaturated fatty acids, necessary to maintain communication between the brain cells.... 3. Nuts contain phytonutrients, which protect your brain by creating an antioxidant effect. 4. Many nuts contain magnesium and calcium, which help regulate brain cell communication. 5. Trace minerals like copper and manganese, help protect against free radical damage in your brain. Check out the full post at: https://www.nutsforlife.com.au/go-nuts-for-brain-health/ See more

In Sarah's words: ...perfect for serving with fish, tofu, tempeh, hard boiled eggs, as a side to a main or as a light lunch... basically eeeeeverything. 10.01.2022 D I N N E R . S O R T E D Looking for something healthy, filling and ready in a flash? Sarah from Sarah's Spoonful has got you covered Serves one 1/4 cup Australian walnuts (I buy mine from Woolworths)... 1/2 cup dry pasta (I used chickpea casarecce, but use whichever you prefer) 1 1/2 cups baby spinach 1 tbsp olive oil 1/2 tbsp sambal oelek (substitute for 1-2 tsp chilli flakes, or 1/3 chopped red chilli) 1/2 tsp nutmeg Salt and pepper to taste Juice and zest of half a small lemon 2 cloves garlic, finely sliced 1 spring onion or shallot, finely chopped Prepare the pasta according to packet instructions. Meanwhile, toast the walnuts in a large dry pan for 4-5 minutes, tossing halfway, until lightly golden. Set aside. Add the oil to the pan and fry the onion and garlic until fragrant. Add 1 cup spinach, the nutmeg, sambal oelek or chilli, salt and pepper, lemon zest and juice and sauté over medium heat until the spinach wilts - about 5 minutes. Once the pasta is cooked, add 2 tbsp pasta water to the pan and drain the pasta. Add the pasta to the pan and toss to combine. Right before serving, add the remaining spinach and toss to combine. Serve and enjoy! See more
