08.01.2022 The Kashmiri Wazwan traditionally consisted of 36 courses but there are 7 dishes which form an indispensable part of this feast. They are Tabakh Maaz, Rista, Rogan Josh, Dhaniwal Korma, Aab gosht, Marchwagan Korma and Gushtaba. Kashmiri Pandits have a slightly different course of menu but majority of the spices used are the same.

07.01.2022 WHY KASHMIRI PANDITS DON'T USE "TADKA" IN THEIR CUISINE? Having been cooking for almost 5 years, I cannot negate the fact that how important the fried mixture of onion and tomatoes are in Indian dishes. Even when cooking Wazwan, I had to add the so called "tadka" to few dishes. But whenever I come across the fusion of Kashmiri Pandit's dishes and wazwan, my excitement to cook the meal crosses over skyscrapers. But ever wondered why Kashmiri Pandits never use "tadka" in their... traditional dishes. I got my answer when I saw my mum cooking Kalia with some drumsticks. She advised that adding tadka to Kashmiri dishes actually sucks up the taste of our traditional spices. Tadka tend to overpower the aroma of spices such as cinnamon, fennel, cardamom etc. These are the few kings of aromatic spices that will rule your taste buds till you are on the dinner table.
