12.01.2022 Ive decided to write a hopefully brief-ish post about how I make my Sourdough Bread. It may not be brief, though. The recipe for the Starter and process for making the bread comes from Brasserie Bread, who is a Wholesale Sourdough Bakery based in Sydney, Melbourne and The Gold Coast. I actually worked for them for about 15 months in their GC packing department after I quit Financial Planning and needed a totally different scene. If an Ex-financial advisor can do this, anyon...e can. Anyway, below is the link to the actual Brasserie Bread recipe, which quite honestly is the best one that Ive tried and thats nothing to do with the fact that I worked for them. There are a lot of wannabes on the Internet who will tell you that taking short cuts will still result in a great loaf of sourdough bread. Dont believe them, there are no short cuts. So anyway, arriving at a great sourdough loaf is quite a process initially, but dont let that scare you off giving it a go. Once you master the process it really does become quite easy...just follow the steps. Probably the hardest part is patiently waiting for the sourdough starter to get to the stage that it is ready to be the base for making your bread. Again, the link above takes you through all the ingredients youll need and the methodical process to get the starter ready. Once you master the process of making a good loaf, then you can start to experimemt and make your own adjustments. The two things that I now do differently from the original recipe is, I slowly increased the hydration level (liquid content) from 205gms to 250gms. I say slowly, because with the higher the hydration (more liquid), the more difficult the dough becomes to handle. Also, I switched out about 1/3 of the water and replaced it with milk, which results in a slightly lighter and more moist loaf of bread. If you love Sourdough Bread, I encourage you to give it a go. Its exceptionally rewarding, sourdough tastes great and is much better for you and your digestion. Go on, give it a go.
