23.01.2022 Yep this pumpkin bread toasted for breakfast was delicious... Sorry I forgot to take a pic before I started eating.. A must make easy, simple, healthy and super delicious.. I poached an egg and in a pan fried up some red capsicum, tomatoes, mushrooms, onions and garlic with salt& pepper and some spinach leaves. Slices of avocado. And of course crispy bacon .. Well it’s Sunday hey! Happy Sunday to you all.. Relax and refuel for the start to another amazing week!



14.01.2022 Try this delicious healthy PUMPKIN BREAD I made today. Warm delicious, light and healthy! Ingredients: 1&1/2 cups of cooked pumpkin 1/2 cup olive oil... Pinch of Salt & pepper 1x tsp allspice Pinch of nutmeg Pinch of cinnamon 4 x eggs 2x tblsp whole natural yogurt 1x tsp apple cider vinegar 2 x cups almond meal 1/4 cup self raising flour 1/4 cup oat bran 2x sprigs of rosemary roughly chopped 1/4 cup toasted pumpkin kernels Here’s what to do: Boil pumpkin until soft drain and let cool. Preheat oven to 150/160 and line a bread pan with baking paper. In one bowl place all dry ingredients and mix well. In a seperate bowl place olive oil, eggs, yogurt, mashed pumpkin, half the rosemary and vinegar and mix gently until combined. Add the dry mix to the pumpkin mix. Fold through until combined. Pour mix into the prepared bread pan and top with pumpkin kernels and left over rosemary ... Cover with foil and bake for 30 minutes. Remove foil and continue baking for a further 10minutes until golden brown on top and if you put a knife or skewer into the loaf it comes out dry... Yummy ... Enjoy fresh or toasted and top with avocado and a sprinkle of goats cheese. Or poach an egg and a side of crispy bacon or chicken... ENJOY... 07.01.2022 Yogurt labne balls infused with fresh herbs and rolled in dukkah in the making.... Will post recipe in 3/4days when the whey has drained... Will also go through the process with you on how to marinate and roll these delicious yogurt cheese balls in homemade dukkah.... All you need to prepare and start this process is: A clean large piece of Muslin ... 1-2kg Whole fat thick and creamy Greek yogurt... (I’ve used dairy farmers as I have found its perfect for these) 2&1/2 tsp sea salt Here’s what to do: Weigh your yogurt and add the salt. Stir with a spoon until evenly mixed through. Place the muslin wrap onto a clean bench. Pour the yogurt onto the muslin in the centre then pulling up the sides bring it together and tie with kitchen string. Tie firmly to a wooden spoon and let hang into a Tupperware or bowl high enough so the ball wont touch the bottom.. You want the whey to drip over 3/4days into the bottom of the bowl. Place into a clean fridge... Check daily to make sure it’s not sitting in the whey.. You can discard this daily. See you in 3 days



03.01.2022 Mushrooms stuffed with Leeks, chorizo, lemon thyme and goats cheese...These mushrooms are so easy and packed with flavour... A meal in itself or a side to any dish.. Here’s what you need: Large mushrooms (allow for one per person) 1x clove garlic crushed 1tbs finely chopped Leek... 1x chorizo sausage finely chopped 3x sprigs of fresh lemon thyme Stems from mushrooms finely chopped Salt & pepper Here’s what to do: In a fry pan add a drizzle of olive oil and fry garlic, leeks, mushroom stems and chorizo sausage until soft.. Add fresh lemon thyme leaves removed from stems and season with salt and pepper. On a baking tray drizzle the whole mushrooms with a little olive oil and top with the cooked mixture. Top with sprinkle of goats cheese.. Bake in the oven for 5/10 minutes until soft. Yummy Let’s Eat! See more
