13.01.2022 Raw Apple Pie Treats are meant to be enjoyed in moderation & this mini dessert is sure to please. The pie case needs a little fridge time, but you can make this one in around 5mins.... The combination of lemon, honey & cinnamon in the apple is not only delicious, it’s also designed to reduce sweet cravings. Genius As you only need 1/2 an apple for 1 serve, you could double the recipe as the apple will keep sealed in the fridge overnight. Pie Case: 1 medjool date, seed removed 1 tbsp raw almonds 1 heaped tbsp shredded coconut Blitz it up & shape into a round. We use an 8cm dipping bowl to form the pie shape. Refrigerate for at least 30mins. Apple Filling: 1/2 small apple, diced 1 tsp raw honey 1 tsp lemon juice 1/8 tsp cinnamon (add more to taste) Gently mix together. Rosti Recipe: 1 sml potato, grated just before cooking 1 tsp coconut oil Big pinch sea salt 1. Heat the oil in a small pan to medium heat. 2. Grate the potato & squeeze out as much water as possible. Add the salt & form into a patty. 3. Place in the pan & gently push it together & flatten it out a bit. (There’s no binding ingredient in this recipe so you need to occasionally keep pressing it into shape & flattening it down). 4. Cook for approx. 5 mins each side, it should be golden in colour.
