09.01.2022 Yummmmm... I love having a sweet but not too naughty treat to enjoy with a cuppa on a cool Sunday arvo.. Try it toasted too :) 4 Ingredient Chocolate Banana Bread 10 medjool dates, seeds removed 3 ripe bananas, peeled and quartered (the flesh of mine weighed 360 grams)... 3 tablespoons cacao or cocoa 3 cups almond meal 1.Preheat your oven to 150C 2.Grease and line a loaf tin with baking paper. Mine measures 19.5cm x 9.5cm 3.Place the ingredients into your food processor and blend at high speed until the mixture is smooth and very well combined. 4.Spoon the mixture into your prepared loaf tin, smooth over the top with the back of a spoon and bake for one hour. I turn mine half way through cooking. 5.Remove from the oven and cool in the tin for 30 minutes before gently transferring to a cooling rack. 6.This cake is delicious warm but the longer it cools the more the centre of the cake will set. 7.Store in the fridge. 07.01.2022 How good does this look! Making this today for a few meals to keep the winter chills at bay - yummmmmmy Prep time 15 minutes Cooking time 40 minutes... Ingredients: 1 tablespoon coconut oil 1 small brown onion, finely diced 1 thumb of ginger, finely grated 1 clove of garlic, crushed 1 cm turmeric root, finely grated or tsp ground tumeric 1 sprig of coriander roots and stems, finely chopped 1 cob of corn sweet potato, cm dice 1 carrot, cm dice teaspoon cumin teaspoon coriander 1 star anise, whole 1 cinnamon stick, whole 1 dried shitake mushroom or 2 fresh 1 whole chicken breast (free-range) 500mls chicken stock 2 teaspoon tamari 1 teaspoon mirin or tsp apple cider vinegar 1 teaspoon dulse 1 teaspoon black sesame seeds Salt and pepper to taste How to make it: 1.In a frypan over medium heat melt coconut oil, add in onion and fry for 3 minutes 2.Add garlic, ginger, turmeric and coriander stems and continue cooking another 2 minutes. 3.Add in vegetables and spices and stir until well coated with spice mixture. 4.Add in stock, tamari, mirin and simmer for 10 mintues. 5.Add in whole chicken breast and shitake mushroom and poach chicken for 15 mintues. 6.Remove chicken breast from soup mixture and finely shred meat, and return to pot with dulse. 7.Serve in bowls and garnish with coriander and black sesame seeds.
