25.01.2022 Today we were visited by one of our customers who has used our Adelaide collection service countless times. Richard takes orders from friends and colleagues and then distributes our oysters to them. It’s fantastic to be able to put a face to a name, and Richard got to see first hand what goes on in our processing shed to fulfil orders. 17.01.2022 We didn’t see this one coming when we opened up our Adelaide oyster orders for collection next week. A 6 day lockdown for SA!! We are currently waiting for confirmation from the South Australian Oyster Growers Association as to whether we are an essential service. If we aren’t then we can’t work.... What to do????? We were harvesting the oysters on the 26th November which is still 8 days away, so hopefully restrictions will have eased after the 6 day lockdown. Fingers crossed If this isn’t possible then we will need to postpone the collection for the following week (this will also be dependent on the condition of the oysters). We will continue to monitor the situation and I also need to have a discussion with Jimmy Elias as to how we will proceed. (Unfortunately I couldn’t get hold of them this afternoon but they were probably flat out with customers). In the meantime I will email all those that have made a purchase already advising them of the above. I have updated the website to show no available stock as we cannot take any more orders until we have a clearer picture of what will happen next week. 17.01.2022 Ceviche is a seafood dish where diced raw seafood marinates in lemon or lime juice, and the citrus juices cures the protein and causes it to become firm and opaque whilst absorbing flavour. Oyster Cheviche Ingredients:... 6 - 8 fresh oysters (shucked) 1/4 red onion 1 tomato seeded and finely diced 1/2 green capsicum finely diced 1/2 tbsp coriander 5 limes juiced 1/2 tbsp oil - sunflower or light olive oil Salt to taste Optional - a dash or mustard or tomato sauce Method: Soak the onion slices in a cup of cold water with 1tsp salt, rinse and drain well. Remove the oyster meat from the oysters, saving the oyster juice and chop oysters into small cubes. In a medium sized bowl combine the chopped oysters, oyster juices, marinated red onion, diced tomato, capsicum, lime juice, coriander, oil and salt to taste. Allow to marinate in the fridge for 5 - 10 minutes and serve. Add a dash of Tabasco too if you like. Serves 2 - 4 people The best thing about this recipe? No cooking required! 15.01.2022 Entertaining a crowd? Looking for ideas for your Christmas celebrations? Impress your guests when you serve them Oysters with creme fraiche and salmon roe. Recipe below... Ingredients: 125g (1/2 cup) creme fraiche or sour cream 1tbs finely chopped chives 2 tsp horseradish 1 tsp fresh lemon juice Salt & freshly ground black pepper Rock salt to serve 48 natural oysters in the half shell 50g salmon roe Lemon wedges to serve Method: Place the creme fraiche, chives, horseradish and lemon juice in a small bowl and stir to combine. Taste and season with salt and pepper. Scatter the rock salt over a large serving platter. Arrange the oysters on the rock salt. Top each oyster with half a teaspoonful of creme fraiche mixture. Top the oysters with salmon roe. Cover with plastic wrap and store in the fridge until ready to serve or serve immediately with the lemon wedges. www.westcoastoysters.com

13.01.2022 Friday night drink idea Tequila Oyster Shooters Ingredients ... - Salt for coating the glass rims - 1 dozen freshly shucked oysters, with the juices - 1 cup chilled fresh lime juice - 2 tbsp minced red capsicum - 1 tbsp minced shallot - 1 tsp fresh coriander leaves chopped - 1 tsp fresh parsley leaves chopped - 1 tsp fresh chives chopped - 1.5 cups tequila - Ice Method: - Moisten the rims of 12 shot glasses with water, then dip each glass in salt to coat the rim. Place an oyster in each glass (with the juices of the oyster). - In a bowl combine the lime juice, red capsicum, shallots, coriander, parsley and chives. Pour 1 tbsp of the lime juice mixture into each of the shot glasses over the oyster. - Pour the tequila into a cocktail shaker with ice cubes and shake to chill.
