24.01.2022 Cheers to our fellow distiller, Adams Distillery, Glen Ireh Estate, Perth Tasmania, on their single malt whisky’s win of Australian Whisky of the Year Award through Jim Murray’s Whisky Bible 2021. Adam Pinkard, CEO and Chairman said our win was totally unexpected and a surprise, but it is a validation on our experimental whisky making. The winning single malt whisky is a heavy whisky with caramel, toffee and chocolate notes that are present due to the whisky’s direct fire ...gas burners and a process of only half filling barrels and then flipping them which exposes the whisky to the wood twice imbuing a deep, rich, char flavour. We love Adams Distillery, Glen Ireh Estate, Perth Tasmania experimental approach which also included their still shape. Stills were manufactured by local manufacturer Stillsmiths. Pinkard says We worked closely with Stillsmiths, we wanted short, fat stills, squat in shape. Which have produced a whisky that is oily, full of flavour with a big mouthfeel, just what we were after. 12.01.2022 Lees Paddocks works completed The team from Great Western Tiers Field Centre recently completed some maintenance works at Lees Paddocks. The jobs consisted of m...anually removing a large log jam and old log walking bridge which had blocked the creek and changed its course. It also threatened to impact on the new bridge installed at the site last year. The team also installed double planking over a boggy section of the track near the bridge and finished off an approach to the bridge, to link up the old track to the new bridge. Michael Scott, Jarrod Elwell, Jason Neasey and Jane Hutchinson completed the project. A great team effort.

07.01.2022 This is historic Westbury, in all its seasonal glory at the foothills of the majestic Great Western Tiers. Westbury was established in 1828 as a garrison village. Irish roots run deep in Westbury, with many convicts and free settlers making their home here. Westbury is the home of our distillery too, we'll be open in early 2021 and will be honouring this Irish connection by triple distilling our whisky.
