24.01.2022 Well, I hope you are having some good family fun this weekend! We had a lovely lunch out with the whole family (11 of us). Its great taking time to relax, have a few laughs and just be together. I ate far too much over the weekend, so to rein it in a little, I thought you might like this quick and easy fish dish. It's light, tasty and kid approved Herb and Nut Crusted Fish... 4-6 fillets of white fleshed fish (schapper, whitting, cod, reef fish) 1 cup cashew nuts (can use macadamia nuts if preferred) 2 Tbsp fresh oregano or thyme cup pasley 1 clove garlic, finely chopped zest of 1 lemon 1 Tbsp lemon juice 1 tsp salt dash of pepper Loving Preparation: Place nuts, herbs, zest and juice of lemon, salt, pepper and chopped garlic in food processor and pulse until nuts are still chunky and ingredients are well combined. Line baking dish with baking paper and place fish in dish. Put 1 Tbsp of nut and herb mixture on top of fish and pat down to cover fillet. Drizzle with oil and bake for 20-30 minutes or until fish is cook through and topping is golden brown. Enjoy! Photo cred: Sarah Beaumont



22.01.2022 Here is the recipe to my beautiful light and moist Zucchini Cake with mock cream cheese icing. It is very easy to make and will please the fussiest of eaters. Perfect to serve over a cuppa or when hungry kids come home from school. Enjoy! 3 eggs 100g grapeseed oil 2 tsp vanilla essence... 1/2 cup honey 250g zucchini, cut into large chunks 150g almond meal 110g buckwheat flour 1 banana, cut into chunks 2 tsp baking powder 2 tsp baking soda Zest of one orange Preheat oven to 180 deg C. Grease and line a 23 x 23 tin. Place orange rind into Thermomix or food processor and grind until fine. Add eggs, oil, vanilla and honey. Whiz for a few seconds to combine. Add almond meal, buckwheat, banana, bp, baking soda and zucchini. Mix in processor until well combined. Pour mixture into prepared cake tin and bake for 25-30 minutes. Ice with more cream cheese frosting. Cream Cheese Frosting 60g dairy-free spread 2 cups icing sugar enough juice of an orange to form a spreadable icing Melt dairy-free spread Add icing sugar and enough orange juice to form a nice consistency. Spread on cooled cake. I'd love to know how you go!

14.01.2022 These Chicken Garlic Balls are fabulous for little fingers. They are a great way to hide extra veggies that have the added bonus of making the meat balls nice and moist. I love to double, or even triple the recipe, and freeze some for busy days when I'm too tired to cook. I'd love to know if you give these a go! Happy Creating :-) CHICKEN GARLIC BALLS... These garlic balls taste great and are a great way to use up left over rice. 500g chicken mince 1/2 - 1 cup cooked white rice 3-6 cloves of garlic, finely chopped 1 cup rice crumbs 1 tsp salt (can use garlic salt) 1 Tbsp parsley OR USE THIS RECIPE SO YOU CAN FREEZE SOME 1.5kg chicken mince 2 eggs 2 cups rice crumbs (or use GF breadcrumbs) 2 cups cooked white rice 6 cloves of garlic, finely chopped 1 tsp salt (can use garlic salt) 1 Tbsp parsley 1 large zucchini, grated** 1 leek, finely chopped LOVING PREPARATION: Fry leek in a little oil for about 4 minutes or until nicely cooked. Put all ingredients into a large bowl and mix thoroughly. Form mixture into balls or rissoles and pan-fry for 2 mins each side until golden. Transfer mixture to baking tray and finish off in the oven for approx 10 minutes. Preheat oven to 180deg C. Mix all ingredients in a large bowl. Form chicken mixture into balls and place on baking tray and place in oven. Cook for approx 20 - 30 minutes until golden brown. Continue cooking in batches until all are cooked. Freeze some for a rainy day (or you can freeze pre-rolled meat balls and then thaw and cook fresh). Happy Creating!

14.01.2022 THE PERFECT BROWNIE EVER I really think this is the ULTIMATE Brownie recipe I have ever created! To be allergen friendly, and taste this good, I mean, WOW. This recipe makes 24 large brownies and are soooo good! They have the perfect crust on top and are dense and goey in the middle. Give 'em a go We are camping at the moment so I took this pic with glimpses of the stunning ocean in the background. Enjoy! 280 grams Dairy free spread 230 gms Dairy free chocolate... cup cocoa 1 cups raw sugar cup dark brown sugar produces a richer tasting brownie 2 tsp vanilla extract 1 tsp salt 6 eggs 1 cup gluten free flour cup cocoa (second measure) Loving Preparation: Prepare a 22 x 34 cm pan by lining with a generous amount of parchment to allow overhang and greasing well. Preheat oven to 180 C (350 F) Combine the chopped chocolate and cup cocoa in a heatproof bowl. Set aside. Add the dairyfree spread to a small saucepan and heat until melted and allow to simmer for 3-4 minutes. Take off the heat and immediately pour the hot spread over the chocolate and cocoa. Allow to rest for 2 minutes. Whisk until smooth and set aside. Combine the raw and dark brown sugar, vanilla extract, salt and eggs in a large bowl. Beat with an electric mixer on high speed until light and fluffy. This will take about 8 10 minutes. Do not rush this step. With the mixer running, pour in the cooled chocolate mixture and beat until well combined. Lastly, gently sift in the flour and second measure of cocoa (3/4 cup). Fold ever so gently until just combined. Pour the batter into the prepared baking pan. Bake for 20 minutes. Remove from oven using oven mitts and the lightly drop the pan on a flat heatproof surface (I use a wooden chopping board on my benchtop). The brownies will deflat slightly (this is good as it creates gooey, fudgy brownies). Return brownies to the oven and bake until a skewer inserted into the centre of the brownie comes out fudgy but the edges look cooked. Oven temperatures vary greatly, and some may only need another 7 minutes, others may need another 20 minutes. Keep checking every 4-5 minutes if unsure. You don’t want to overcook these beauties! Place brownies on a cooling rack and cool completely in the pan. Lift out and cut into 24 squares. Enjoy!

13.01.2022 One of the best things you can do first thing in the morning, is drink a large glass of warm water with a big squeeze of fresh lemon. It is fabulous for weightloss and fits into any eating plan. Dentists warn to brush your teeth afterwards so you don't damage the plaque on your teeth. It is something I do EVERY morning. Does anyone else do this?

08.01.2022 Sometimes people beat themselves up when they slip up on an allergy friendly journey. If this is you, please give yourself some love. In the beginning it can be very overwhelming. Focus on one meal at a time, make the change and move forward. Yes, sometimes that is easier said than done. One way to help is to cook once, eat twice. So, cook double or triple, eat one that night and freeze the other portion. Make life easier for yourself and decrease the stress. Which meal do you struggle with the most? 02.01.2022 Happy Weekend! On Sunday I turn 29 (again ;-)) so what better way to enjoy life than with an amazing desert! Is there anything more delicious or spectacular than pavlova? This is my beautiful Mum's recipe (Mom for our American friends) and I hope you enjoy. Please share pics if you make this and let me know how it goes. #pavlova #whomadeitfirst #kiwiaussiedesert #can'tstopatoneslice Ingredients 4 eggs (room temperature) Pinch Cream of Tartar... 220g Caster sugar (divided into two) 1 tsp. vanilla bean paste 1 tsp. vinegar 1 tbsp. cornflour 1 tbsp. water Loving Preparation Preheat oven to 200C (390F). It is important your oven seals when the door is shut and no heat escapes. Make sure the eggs are room temperature. Separate the egg yolks and put them aside, we just need the egg whites. Beat the egg whites and the cream of tartar with an electric beater until they form stiff peaks. Gradually add the first half the sugar and continue to beat until the egg whites look thick and glossy (kind of like melted marshmallow). Add the cornflour, vinegar, second half of the sugar, vanilla bean paste and tbsp. water. Fold gently through mixture until combined. Take your baking paper and pull out double the length of the baking tray. Fold it in half. Unfold the baking paper, put a little bit of water on your fingers and flick onto one side of the baking paper, just a good sprinkle - we aren’t wanting to soak the paper. Fold wet sides together, place on baking tray. Pile meringue into the middle of the tray with a spatula. Try and keep it as high as possible as it’s easier to spread it out than it is to push it in and up. Smooth out the meringue and then place it in the hot oven, switch the oven off and leave it for an hour. Ensure the oven is NOT opened during this hour. Not even to check, so long as the oven is off it should be ok. Take out of the oven and cool. Top with coconut cream and decorate with fruit of your choice. *If you double mixture for larger Pavlova, increase time to cook to 1 hour 20 minutes.
