19.01.2022 These arent any kind of Nachos, they are fresh, cheesy and flavourful, truly a meal everyone will enjoy. #MeatFreeMonday 1 can corn kernels, rinsed and drained or 2 fresh corn grilled on a BBQ can black beans, rinsed and drained... Freshly ground black pepper 200g corn tortilla chips 1 cup grated haloumi and cheddar combined 60g crumbled feta red onion, sliced 4 tbspns chopped coriander 1 spring onion, sliced 100g sour cream 1 tablespoon chipotle chilli in adobe sauce 1 avocadoes 1 lime juice 1 green chilli, chopped punnet chocolate cherry tomatoes, diced Roughly mash the avocado, lime juice and chopped green chilli in a bowl. Season with salt and pepper and add a little chopped coriander. Combine the sour cream a squeeze of lime salt and the chipotle. Pickle the sliced red onion with a dash of oil, a good splash of vinegar and salt and pepper. Combine together and allow to sit and soften. In a large ovenproof dish or paella pan roughly arrange the corn chips. Sprinkle over the grated cheese and place in a hot oven for about 10 minutes to melt the cheese and toast the chips.Spoon over the avocado, sprinkle over the feta, corn, black beans then pickled onion, tomato, chipotle cream then the spring onion and coriander. Enjoy with a cold beer or margarita! See more

(Serves 4, with jars approx. 750ml capacity) ... 2 sweet potatoes, cut into chunks and roasted Rocket 80g slivered almonds, toasted 2 tins chickpeas, drained and rinsed 1 pomegranate, seeds removed 2 pieces danish feta, cut into chunks lemon, juiced 1 cos lettuce, chopped 1 orange zest and juice lemon juice 80ml olive oil Salt and pepper to taste 2 tsp dijon mustard For the Tahini Dressing 2 tbsp tahini Juice of 1 lemon Salt to taste 100g natural yoghurt 1 garlic clove crushed Combine all ingredients together and season to taste. Toss the chickpeas in lemon juice, 1 tsp ground cumin and coriander, tsp chilli powder and salt to taste. Lightly fry the chickpeas for a few minutes, set aside. Layer the salad ingredients in a jar, and drizzle over the orange dressing, and a dollop of the tahini dressing. #MeatFreeRecipes #MealPrep #Salad

Spring Time Pasta (serves 8-10) 1 packet cassarecia or fussili pasta... 100g peas 1 packet frozen broad beans (outer skin removed) or fresh if available 2 bunches of asparagus cut into 1 in lengths 1 bunch broccolini, chopped 1 tsp chilli flakes 1 zucchini, diced 120g parmesan cheese, grated olive oil 2 garlic cloves, chopped bunch parsley, chopped bunch dill, chopped 1 lemon, cut into thin slices salt and pepper to taste Cook the pasta in salted water until tender. Add the asparagus and broccolini and drain, reserving some of the cooking liquid. In a large frying pan heat a little oil and fry the garlic, add the zucchini and sauté for a few minutes, add the peas, broad beans and the chilli flakes. Add the pasta and toss to combine, adding a little cooking liquid if needed. Add the lemon, fresh herbs and parmesan and season to taste. See more

For the jelly 1.5L water 500ml red wine 3 star anise 1 orange, zested in strips 3 cinnamon sticks 10 whole cloves 350g sugar 60ml blackcurrant syrup 1 lemon juice and zest 38g gelatine sheets About 6 plums finely sliced Combine all ingredients except the gelatine and plums in a saucepan. Simmer for a few minutes and set aside to cool. You can do this a day ahead to allow the flavour to develop. Soak the gelatine sheets in cold water for about 10 minutes until the hydrate. Squeeze out excess water. Strain the red wine liquid and then heat a small amount and dissolve the gelatine in the warmed liquid. Combine all the liquid and pour into the base of a trifle bowl. Add the sliced plums and place in the fridge to set for several hours or overnight. For the pastry cream 600ml milk 5 egg yolks 100g sugar 50g cornflour 1 vanilla bean scraped 60-70ml marsala (or more to taste) 2-300ml whipped cream Combine the egg yolks, sugar, cornflour and a little milk and mix to a smooth paste. Heat the milk and vanilla bean until it just comes to the boil. Turn the heat down, add the egg mix and whisk constantly until the mixture thickens. Add the marsala and then spoon into a container and allow to cool completely. When ready to use fold in the whipped cream. To assemble 1 plum, finely sliced 2-300g sliced panettone or sponge cake Place a thick layer of marsala cream on the set jelly layer. Then arrange slices of panettone in a concentric circle on top. Spoon over more cream in the centre of the circle and top with sliced plums See more

01.01.2022 How long do you think these Lemon Cookies will last in your house (Makes about 42 at 20g each) 375g plain flour... 10g baking powder 200g caster sugar pinch salt 125g butter, softened 2 eggs 40ml lemon juice zest 1 lemon 5ml lemon extract 250g sifted icing sugar to roll Whip the butter and sugar together, then add the eggs 1 at a time. Sift together the remaining dry ingredients. Add the lemon extract and fold in the dry ingredients along with the lemon juice. Spoon into 20g balls. Place the icing sugar in a bowl, and roll the cookies in icing sugar and place on a lined baking tray. Bake at 160C 12-15 minutes until very lightly golden. Allow to cool. See more
