25.01.2022 Irish whiskey was considered the benchmark for whisk(e)y production right through to US prohibition, when bootlegged imitations tarnished the spirit’s reputation. It was also likely Irish settlers who begin distilling what we now think of as American whiskey. The benefits of native corn had not yet been discovered, and so these pioneers began experimenting with excess crops of rye - a European grain that took to the environmental conditions of the Americas better than barley.... The farmer-distillers made a comfortable living raising livestock, growing grain, and making rye whiskey that they could trade to fulfill their other needs. 22.01.2022 Arguably the most popular style of American whiskey, bourbon has a diverse flavour profile typically characterised by vanilla, oak, caramel and spice. Bourbon is distilled from a mash bill containing a minimum of 51% corn and must contain no additives. The mash must be distilled to no more than 80% abv, entered into the barrel at 62.5% abv or less, and bottled at a minimum 40% abv. The spirit must be matured in charred virgin oak barrels, but there is no minimum ageing requir...ement - products aged for as little as three months are sold as bourbon. The exception is straight bourbon, which must be aged for a minimum of two years. In addition, any bourbon aged less than four years must include an age statement on the label. ‘Tennessee Whiskey’ - notably Jack Daniels - is the recognized appellation for a straight bourbon whiskey produced in Tennessee that has undergone the Lincoln County Process, in which the spirit is dripped through a minimum of 10 feet of sugar-maple charcoal prior to ageing. US federal law stipulates that bourbon is a distinctive product of the United States, and Australian trade agreements recognise this - but that doesn’t stop us producing bourbon-style whiskey. 18.01.2022 We’re back, and so is the Octomore 8.3! The Octomores form Bruichladdich’s range of super heavily peated whiskies, and with phenol levels of 309PPM, the 8.3 is the peatiest of the bunch. Distilled from barley grown on Islay’s Octomore Farm, the 8.3 was matured in a combination of first fill ex-bourbon casks and ex-wine casks, and is described as a thunderstorm of a dram. 13.01.2022 Whisky Den is a Bruichladdich ‘lighthouse venue’, which is just a fancy way of saying we really like their whisky, and stock a lot of it. The Port Charlotte range showcases Bruichladdich’s heavily peated expressions (not to be confused with the super heavily peated Octomores). Their flagship expression, the PC10, is peated to 40 phenol parts per million and is matured predominantly in first-fill ex-bourbon casks. The MRC-01 2010 takes an even split of ex-bourbon and ex-wine m...atured whisky, then combines the two for a further year in French Bordeaux casks. The Islay Barley 2012, as the name suggests, is distilled entirely from malted barley grown on the island, then matured in 75% ex-bourbon and 25% ex-wine casks for a total of 6 years. 12.01.2022 The Japanese whisky industry began when Masataka Taketsuru brought the trade back from Scotland. The son of sake makers, Taketsuru studied organic chemistry at the University of Glasgow before undertaking internships at distilleries including Longmorn and Hazeburn. Upon returning to Japan Taketsuru oversaw the construction of Suntory’s Yamazaki Distillery, before branching out on his own to start Yoichi Distillery and the Nikka whisky company. Similar to in Ireland, Scottish distillers were plagued by the British tax system, and it was this that led to the designation of Scotland’s whisky regions. 09.01.2022 Before there was whisk(e)y there was poitin, an Irish malted barley spirit produced in a pot still and sweetened with sugar beets. Similar to American moonshine, poitin production was illegal, and so the Irish often hid the spirit in empty wine barrels. This barrel-aged poitin could then be described as the forebear to whisk(e)y as we know it today. Indeed, Bushmills in Northern Ireland is the world’s oldest licensed distillery. Poitin’s legal status has had a carry-over effe...ct onto the Irish whiskey industry of today, through heavy taxes on malted barley. 07.01.2022 Similar to in the US, the art of whisk(e)y distillation was brought to Australia by Irish and Scottish settlers (though likely many of those here were ex-convicts). The first legal distillery was established in 1822, in Hobart, and it was not uncommon for a household to possess their own backyard still. It was this latter that incurred the ire of the then Governor of Tasmania, John Franklin, who in 1838 legislated against small scale distilling. Federation in 1901 saw this l...egislation go nation-wide, providing a minimum still-size of 2700 litres and effectively crippling our infant industry. A lowering of import duties combined with a significant increase in excise proved the final nail in the coffin (tax has always been the enemy of whisk(e)y production). This law was finally overturned in the early 1990’s, in no small part due to Bill Lark, who went on to found Lark Distillery in 1992. Today there are nearly 300 distilleries across the country, with whisk(e)y being produced in every state. Whether your preference is for single malts or blends, sour mash (bourbon-style whiskey) or rye, double-distilled, triple-distilled, peated or not, we make it right here.
