Local Juicy Delicious And we’ve got the perfect Locavore recipe to showcase their fabulous flavour. For the salad: 400g cooked Mooloolaba Prawns (Peeled & deveined) 2 x Mangoes (cut into 2cm cubes) 2 x Avocadoes (cut into 2cm cubes) 1 packet rocket and spinach mix Lime wedges for serving For the dressing: 2 x Limes 1/3 cup finely chopped coriander leaves 1 long red chilli, seeds removed & finely chopped 1 cm fresh ginger grated 1 tsp fish oil 1 tbsp honey 1 tbsp extra virgin olive oil Finely chopped parsley How to make it: - Roughly chop half the prawns - Combine with avocado and mango - Grate the zest of half a lime - Juice both limes - Place lime zest, juice, coriander, chilli, honey, ginger, fish oil and olive oil in a bowl and whisk to combine - Season well - Pour over prawn mixture and toss into lettuce mix - Serve with remaining prawns and lime wedges Don’t forget to share your pics and tag White's IGA or use #whitesiga #locavorechristmas We’ll share some of the best pics on our stories.
