23.01.2022 School Muesli Bars Simple, delicious, freezer friendly and free from gluten, grain, dairy, egg, nuts and refined sugar. 2 cups desiccated coconut (190 grams) 1/2 cup pumpkin seeds (80 grams)... 1/2 cup sunflower seeds (80 grams) 10 medjool dates, soft or chopped (220 grams) 1/2 cup raisins (75 grams) 1/2 cup dark choc chips (85 grams) 2 tablespoons honey (75 grams)* 4 tablespoons hulled tahini (110 grams) 1 teaspoon vanilla extract pinch of salt Preheat your oven to 180C. Grease and line a square 20cm tin with baking paper over-hanging the sides for easy removal. Place the ingredients into your processor and blend until the mixture is broken down and sticking together. Press the mixture firmly into your prepared tin and bake for 18 minutes. Remove the slice from the oven and leave to cool in the tin, place in the fridge for one hour prior to slicing. Eat and enjoy. Thermomix Instructions Preheat your oven to 180C. Grease and line a square 20cm tin with baking paper over-hanging the sides for easy removal. Place the ingredients into the bowl and blend at speed 10 for 12 seconds. Press the mixture firmly into your prepared tin and bake for 18 minutes. Remove the slice from the oven and leave to cool in the tin, place in the fridge for one hour prior to slicing. Delicious 1/2 cup pistachios (70 grams) 1/2 cup peanut butter (125 grams)... 100 grams 85% dark chocolate, melted 1/2 cup coconut cream (125 grams) 1/2 cup honey (170 grams)* 1/2 cup goji berries (50 grams) 1/2 cup cranberries (70 grams) 1/2 cup cashews (70 grams) Line a square 18cm tin with baking paper overhanging the sides and set aside. Place the pistachios into your processor and blend until they are roughly crushed. Pour the pistachios into a bowl and set aside. Add the peanut butter, melted chocolate, coconut cream and honey to your processor and blend until the mixture is smooth and well combined, it will only take a moment. Add the remaining ingredients and mix to combine. Pour the mixture into your prepared tin and place in the freezer to set. Approximately 2 hours. Slice and store in the fridge or freezer. You can eat directly from either the fridge or freezer. My preference is the freezer. Thermomix Method Line a square 18cm tin with baking paper overhanging the sides and set aside. Place the pistachios into the bowl and blend at speed 6 / 1 second. Pour the pistachios into a bowl and set aside. To melt the chocolate in the thermomix break the chocolate into pieces and add it to the bowl. Grate the chocolate at speed 6 / 1 second. Scrape down the sides and melt the chocolate at 2 mins / 50/ speed 2. Once melted add the peanut butter, coconut cream and honey and mix 5 seconds / speed 5. Add the remaining ingredients and mix reverse speed 3 / 3 seconds. Pour the mixture into your prepared tin and place in the freezer to set. Slice and store in the fridge or freezer. You can eat directly from either the fridge or freezer. My preference is the freezer. *you can use rice malt syrup if you prefer. makes 16 pieces. Enjoy x the slice... 1 cup almond meal 2 cups desiccated coconut 4 tablespoons cacao or cocoa 4 tablespoons almond butter 4 tablespoons honey* 2 tablespoons coconut oil 1 teaspoon natural peppermint extract pinch of salt icing 6 tablespoons cacao or cocoa 4 tablespoons coconut oil, liquid 2 tablespoons maple syrup 1/2 teaspoon natural peppermint extract Line a square 18cm tin with baking paper overhanging the sides for easy removal. Place the ingredients for the slice into your processor and blend until the mixture resembles a fine, sticky crumb. Press the mixture firmly into your prepared tin. Place the icing ingredients into a small bowl and mix until they are well combined and looking delicious. Pour the icing over your slice and place the slice in the fridge to set. Slice. Serve. Eat. 12.01.2022 note this recipe requires high powered blending. Coconut Mud Cake 4 cups desiccated coconut... 1 1/2 cups coconut milk 1/2 cup honey* 1 teaspoon vanilla extract pinch of salt 6 eggs 2/3 cup coconut flour Preheat your oven to 175C or 350F. Grease and line a 20cm square or round cake tin. Place the desiccated coconut into your processor and blend at high speed until the coconut is turning to butter or a smooth thick paste. You will need a high power processor for this. If after a few minutes it doesn’t seem to be happening you can add a tablespoon or two of the coconut milk and see if that helps. Once the coconut is smooth add the remaining ingredients and blend to combine. Spoon the mixture into your prepared tin, it will be very thick. Use your hands to level the top. Bake the cake for 45 minutes or until an inserted skewer comes out cleanly. Remove the cake from the oven and cool in the tin for 20 minutes before transferring to a cooling rack.
