25.01.2022 Mariana I’m Mexican and I never knew I had food allergies growing up in Mexico. It was really only when I moved to San Francisco with my American husband and my diet changed, that I started getting symptoms. I got checked and discovered I was coeliac when they told me I couldn’t have bread for the rest of my life I was heartbroken! Going out in San Francisco or even New York wasn’t easy for gluten-free people. Then we moved to Sydney a few years ago. I only discovered Whol...egreen Bakery in the last six months. I thought it was heaven walking in here. Having good pastries, especially croissants and pain au chocolat, was just incredible. I try not to come here too often though to stop myself from eating croissants every day! I’m pregnant with my second child. They could inherit the coeliac gene but my doctor just said, as long as they’re thriving, not to be too worried. My greatest dream in life? I want to live a good life and help the people around me live a good life too. Which for me means trying to live in the moment more. I’ve always loved sweets my favourite Indonesian dessert is called Bika Ambon, a sticky soft yellow cake. 15.01.2022 Stefano, city cafe manager and barista I came here from Italy four years ago. I’d never worked in hospitality before I was an engineer working near Milan, but I wanted to travel so I came to Australia with Maria, my girlfriend and now wife [and barista at our Waverley cafe!]. Since then I’ve been working as a barista and now I’m the manager here too. Making coffee isn’t as easy as it looks, it can be ruined by one little mistake. I know that surprises people but it’s tru...e. There are so many variables. You have to set many things: the weight, the coarseness, the machine temperature, water volume. Everyone has a recipe and you have to follow it. But if you taste the coffee and it’s not good, you have to make adjustments. So you need to know your coffee bean, your equipment. We can make adjustments many times during the day, every day. It depends on the humidity, how long the beans have been outside of the bags, all sorts of things. As a manager I’m responsible for making sure the coffee is consistently good. If you miss some part, customers will just go somewhere else because there’s so much competition around. I like working here because it’s a beautiful environment and there’s a good vibe and everything is done very well. Cherie and Grace take so much care with every single aspect. I’m not gluten-free but I love the food here, especially the bread. It’s on another level to other gluten-free bread anywhere else. My dream for the future is to find a way to stay in Australia. I miss my family but I don’t want to go back to live in Italy. I came here and saw the world from another perspective. I was suddenly the immigrant and it made me realise how narrow-minded I used to be when I lived in Italy, with regards to immigrants there. I used to think, we are the best and now I don’t think that at all. Everyone asks Maria and I, who makes the better coffee. Well, customers say it’s Maria! . . @52suburbs . .

07.01.2022 We are CLOSED NEXT MONDAY so stock up today and over the weekend And if you’ve ever wondered about the life of a pastry chef, including the extraordinary hours they keep, Brett’s story might interest you Brett, pastry chef I’ve been a pastry chef for eight years and working at Wholegreen for three months. I’ve always loved food and after living in London years ago and travelling around Europe, seeing all the different cuisines, I wanted to come back and explore patisse...rie. My day here starts at 3am. First I bake everything and then arrange it all in the shop. Then at around 6am I go onto the dough sheeter and do all the croissants and the pie and pastry bases until I finish work at 10am. I have a family with two small kids. At the moment it works; my wife organises the kids in the morning then I get home at 11am, make dinner, have a two hour sleep and then pick up the kids. I go to bed around 8-9pm. I do get very tired I usually only get five hours of sleep, if that. But I much prefer it to my old career as a media specialist in advertising all the work I was doing then didn’t matter because it was someone else’s opinion in the end and it was all based on money. Here you make something and it goes out and gets sold. It’s much more satisfying. The hardest part is getting up at 2am although I like the peace and quiet in the kitchen in the middle of the night. . . @52suburbs . .
