21.01.2022 Nothing says Sunday than a stack of pancakes Buckwheat, plain, thick, thin, plant based, berry or banana. So many options, so hard to choose ... I'm a huge fan of @panaceas_pantry creations like these grain free, plant based pancakes made with only 5 ingredients. Here's the recipe which are sure to be a hit.... INGREDIENTS 1 1/2 cups buckwheat flour 2 tsp baking powder 1 1/2 ripe bananas, peeled and chopped 1 tsp vanilla extract 1 1/4 cups almond milk METHOD 1. Sift flour + baking powder into a large mixing bowl. Set aside. 2. Add milk, vanilla and banana to a blender and blitz till smooth. Pour into the flour mix, and whisk together. Allow batter to sit for at least 10 mins before cooking. 3. To cook, heat a cast iron skillet (or fry pan) over medium heat. Reduce heat to low, add 1/2 tsp preferred oil like coconut oil and cook pancakes in 1/4 cup measurements, allowing lots of bubbles to form on the first side before flipping and cooking the second side for a further 1 minute. 4. Whether it be EOFY sales, crazy Mondays or the constant barrage of discounts and offers that are "too good to refuse" that come into our inbox everyday - if you don't need it - it's not a good deal. And now that we're starting to emerge from post COVID-19, are we going to go back to our old habits and shopping ways or is there a new life and values we want to live by?... One of the hardest things about having an online store is the constant pressure to offer discounts and coupons. Whilst we do occasionally have specials and sales, it's not that I'm anti promotions, it's just that I am anti unsustainable overconsumption and people buying things they don't need because "it's a good deal". Or receiving little samples or giveaways that just end up cluttering your cupboards only to end up in the trash one day. If you're using promotions to save some money and get a deal on something you really need, that's great. And if you can make that thing you really need be a sustainable product, from an ethical brand or company, even better.
