10.01.2022 Paneer and far out: Something different tonight, I’ve been making #quest fresco for a while now. Queso fresco is basically the same as the Indian fresh cheese #paneer Kirsty spotted @anjum_anand the other day doing a baked paneer on the #bbq and it gave me an #idea Anjum marinated the paneer in yoghurt, herbs and Indian spices, but I fancied trying marinating it in a #guajillochile paste like you’d use for #birriatacos ... It worked great, I’ll try it out a few more times then I’ll post the #recipe here See more

07.01.2022 How’ve you Bean?: Ok, so I’m going to start sharing some recipes, give em a crack, see what you think #1 Red Beans & Rice This is a #neworleans #classic it’s simply and tasty, reheats well and can go in the slow cooker, on the stove or in the bbq pit. Note: this uses Red Beans which are not the same as kidney beans (they’re slightly smaller and the skin is more tender) so replace with #pintobeans if you can’t find them... Ingredients: 3cups Red Beans (soaked overnight then boiled till tender but not falling apart) 1 large Onion diced 4 sticks Celery diced 1 green Capsicum diced 2 chorizo, kabana or other smoked sausage, or a smoked ham hock Enough chicken stock to cover 1tb paprika 1tb black pepper Bay leaf Hot sauce and salt to taste. Method: Gently sauté the chorizo in a heavy pan, the add onion, celery and capsicum (known as #thetrinity ) and sweat down, add pepper, paprika and bay then add beans and stir through. Now add enough stock to cover and simmer for at least an hour, more likely two until the beans start to break down and thicken the sauce, serve with rice, thank me later Feel free to experiment with the meat, or even omit. Smoked sausage is traditional but leftover pulled pork, or brisket bits would work, and I’ve a feeling pastrami might be a goer Leave me a comment with your findings @ Melbourne, Victoria, Australia

01.01.2022 ANNOUNCEMENT: Hi All, just letting everyone know that this week will be the last for @wightsbbq On Sunday night 22/12/19 we’ll close our doors for the last time. I live around 90km from @wightsbbq and the travel on top of the long hours cooking bbq has become unsustainable for me physically and mentally, and so we’ve taken the decision to close the doors at @wightsbbq in Cowes. After a summer break with my family we’ll begin to look at what our next move is, but you can expe...ct to see me cooking bbq somewhere sometime in 2020.
