25.01.2022 The war is over (for those following the saga- a long long time ago in galaxy of hops alien to ours the Empire ((read public service) create a Death Star of legislation (as a side notes ( how many nested parenthesis become unintelligible in a AI centric cloud (so so tempted to start a nested conversation here(NErD))))) So the long and the short is we are back. We won and they won. A win/win scenario (Because they are watching). The peace terms will be etched out after Tuesda...y the 7th Force, May with you be. Wignall is back - RIP, alas - Chewie is not.



25.01.2022 The cooling tower is finished - we going to fire up the brewery tomorrow.

25.01.2022 Big weekend brewing. Big thanks Darren Blackhurst ‘Belco Boyz’ in the fermenters as is the soon to be christen the London Porter. We are brewing next weekend as well, to get an America IPA done ‘Stable Genius’ now that Trump is gone it will not be as bitter. We working on Australian IPA called Skippy (‘full on hops’ sorry about the dad joke). Darren’s Scottish is ready - call ‘Grain Spotting’ . A red called ‘Murder’. All to launched at the Potbelly’s birthday party. Stay the tuned.

21.01.2022 Glycol done. Darren Blackhurst taking a break from the plumbing (respect to plumbers) that took six times longer than we planned- now the last bit of this jigsaw is the cooling tower - 90% complete hopefully finish it on Friday, then it is game on!



20.01.2022 Look out for Strange Brew IPA- on at the Potbelly soon. A cross-Ditch collaboration aged bittering hops and fresh Taiheke. A part of a Wignall experimental arm.

18.01.2022 I am not saying that we got everything we wanted - CAUSE I GOT ZIP; but I am sick of asking ... so we are going to move on with what we have. We who will be cleaning and rearranging the pub salute you.

18.01.2022 Feeling excited - firing up all the burners on the brewery today, charging the chillers and doing crash chill testing. Wow, for those following the story this moment is 2 years in the making - Wignall Brewery goes live again! Belco Boys will back on at the bar.

14.01.2022 The new home is slowly coming along

11.01.2022 Just running the system through it’s paces at the the moment. Looks like we have over engineered the cooling system. The wort entered the fermenters too cold - importing auto oil pan heaters from Chicago to warm the fermenters - while we are waiting for them to arrive we’ll baseline other parameters in the system.

06.01.2022 Wow - big day today! As Nic Jones was nailing up the fence , Darren was repurposing the discard patio furniture seats, then all hands to the brewery. This is a nano-brewery and nano-distillery, our own beer will go up against the the best in country according my taste buds ( the privilege of owning a business in this current climate). We are aiming to have our own 5 taps at the Pot Belly Bar and other select bars and restaurants in town. Our (International) Chief Beer Maker ...(ICBM), and general man of mystery, Darren Blackhurst is leading the charge in creating fine English ales - exceptional ESBs, and of course, renowned as the author of belco boys is ready to produced hand crafted beers to match our hand craft spirits and food. It was wonderful to have such a productive day with such great folk - truely blessed, just can’t wait to pour the new Wignall range. See more

05.01.2022 It may not be home, but it could be very well where it all starts again. I have been praying for this for awhile.



04.01.2022 Check that out - full throttle dump from the boil kettle to fermenter three via the cooling tower without the glycol chiller backup and we hit pitching temperature- we were worried it might be too cold. All systems are go. Over the next 4 weeks we will be laying down the beer for vodka, gin and moonshine yes the still will operational and then back to making beer.

04.01.2022 Hi Folks, been a little quite in here; it has been an adventure. At this stage - I believe that we are 6 weeks away from a pilot brew and 8 weeks away from a full blown operations.
