23.01.2022 Got some good size pork bellys for the smoker tonight & a rack of beef ribs for good luck. One pork belly will be turned into delicious pork candy burnt ends. Recipe for pork belly burnt ends below. BBQ Pork Belly Burnt Ends... INGREDIENTS 4kg pork belly - skin off 3-5 tablespoons pork seasoning1 1.4 cups BBQ sauce 2 tablespoons honey 1/2 cup chicken stock 2 tablespoons salted butter, cut into small cubes INSTRUCTIONS Start by cutting the belly into 2 inch cubes. Season generously with the pork seasoning, then cover and place into the fridge for an hour. Fire up a smoker to 250f. Place the pork cubes spaced out onto a non-coated wire rack. Place the rack into the smoker and cook for 2 hours. In a bowl, combine the sauce, honey and stock. Remove cubes from the smoker and place into a foil pan large enough that they are in a single layer. Pour over the liquid mixture making sure all cubes are well coated. Sprinkle the butter cubes across the top, then cover the pan with foil and return to the smoker for another 1.5 hours. Remove the foil, stirring the cubes to coat once more, than cook a further 30 minutes until the coating is sticky and thick. #Wildfiresmokers #porkbelly #porkcandy #lowandslow

21.01.2022 One thing we love to serve on our Wildfire Bbq truck is smoked then fried Wingettes/Drumettes. Here is how we do them for all you legends that have asked. Seasoning You can use your favourite wing Seasoning or just abit of salt and peper. ... Smoke Pre heat your smoker to 250f Place all wings inside smoker Smoke until the wings reach the internal temperature of 155F. This usually takes about an hour. Frying Preheat your cooking oil to 375F (I prefer canola oil)I use my Wildfire 12 inch cast iron skillet for deep frying and it works great to retain the heat in the oil or you can use a deep fryer. They onlyneed about 3 minutes until skin is golden brown and the internal temperature of the wings is 175F SAUCE If you like no sauce on your wings, remove the fried chicken wings from the cast iron skillet and sprinkle with a little additional sweet rub (Squealer) and serve immediately. If you like your wings sauced, you can use your favorite wings sauce. I use a little hot sauce and blue cheese sauce for a great combination of tang and heat.
