20.01.2022 Hello friends, TODAY IS THE DAY! A deluge of 10 beers are now available on our website, friendly stockists across Australia and at our cellar door for both takeaway and by the glass tastings. For this weekend, all 5 Bright Side beers will be pouring from bottle in lambic baskets just like the old days when we opened and didn’t have taps. Online orders will be shipped early next week, bear with us Alongside these Bright Side beers, we have the last 4 'Sts' from last year, a...ll of which once again use beyond organic smoke affected whole fruit from Ravensworth. While the Bright Side beers are a maceration and fermentation with young, freshly fermented Gold, these St's are whole fruit macerations with mature, aged Gold barrels from our cellar. There is crossover on the Shiraz and Riesling between the two and they make for an interesting comparison of the impact of the maturity of the beer. This is not only our last release of the year but also the last one until February 2021. As such, we've made it a big one so that if you please, you can enjoy our beer during the silly season, Christmas break, New Years eve/day celebrations and right through to Australia Day. Due to the abnormally large volumes of parcels Auspost is processing this year (the real MVPs...), they have suggested placing your orders by/before 9 Dec for Interstate & regional NSW and 16 Dec for Sydney area in order to receive them before the Christmas holiday. 17.01.2022 We have some BIG news y’all. Along with our dear friend Bryan Martin Ravensworth wines, we are going to be hitting the road HARD next month on a national roadshow showcasing our collaborative project Bright Side, a series of five Australian Wild Ales made with smoke ‘tainted' grapes. When Bryan realised his grapes were smoke tainted from the 2020 bushfires, he concocted a plan ‘B’ with us to turn the unwanted grapes into beer. These are five beers expressing the 2020 harves...t using fresh Gold as a base, married with Ravensworth Shiraz, Gamay, Riesling, Viognier and Sangiovese varietals. Spoiler, they are awesome and nuanced. We embarked on this journey for a number or reasons firsty, I hate waste and I love giving grown produce a 2nd or 3rd life. These beers are an extension of that, adding value to a crop that is seen by an entire industry as useless, trash. Second to experiment further with smoky fruit in order to make educated inferences in years to come (I mean we can’t expect this not to happen again). Third to challenge ideas on worth what is worthy of being used and what is wasted, and lastly to help Ravensworth recover a portion of the cost of the 2020 harvest- this is a separate label for us both and something we undertake 50/50. We are looking forward to being out and about having conversations about the project and taking an optimistic approach on the harvest, indeed the year that was, 2020. The Bright Side beers are two friend’s attempt to view the world with a glass half-full. Share in our optimism. This is real big for us. Its gonna be a ball y’all. 10.01.2022 ST FLORENCE 2020: SEMILLON & ST WALTER 2020: BLACK MUSCAT RELEASE THIS FRIDAY 4 DEC As you can see here, I am pretty excited about this. Why you ask? well I love making beer with wine grapes... These two are named after Benny’s and my kids so they are extra special I have mountains of respect and admiration for the Tyrrell family and their family run winery @tyrrellswines & I’m honoured and incredibly grateful to be able to make a beer with their Johnno’s vineyard sem once again. these are the first releases from our fourth year of making beer with wine grapes and they display lessons from each of those harvests both of these grapes saw effects of bushfire smoke and specifically the Tyrrell’s fruit, were not suitable for the purpose of making wine but we as brewers still get to play with them and make something productive. I reckon that’s pretty cool. these beers taste like beer, but then also have fruit thats cool, i like beer flavoured beer they also taste really nice, the semillon showing lemony, pineapple-y, structural savoury-ness and the black muscat brimming with rosewater and classic muscat lolly characters while having a really tight palate that isn’t cloyingly sweet (like you might assume from that aroma description) we put a ton of work into them and its always nice to see the results of that, I’ve written about both of these beers on our blog if you would like to know. and lastly, well I reckon y’all will like them too. They are well suited for the holidays TBH. Available online and from cellar door from Friday 4 Dec. 07.01.2022 NOEL 2020 Tomorrow at noon we have a mere single barrel, that’s 241 bottles, of our festive ale Noel available online and at cellar door only. Among the many curveballs 2020 has thrown at us was one from our Murrumbateman friends Clonakilla that they would not have any freshly empty Muscat barrels for us to fill with Noel. This was of course due to the fact they were unable to make estate wine (including their delicious Muscat) as a result of the bushfires and smoke tainted... grapes. We don’t think Noel would be the same without these freshly emptied and filled barrels, so we decided to not brew a batch this year. However, the good news is that we did keep a single barrel back from our 2019 brew of of this beer to see how it would evolve over extended ageing, say 18 months in barrel . So for our 2020 Noel, we decided to bottle this whole barrel (not even a keg for cellar door) and offer it online and at cellar door exclusively. We have learned that many of you have come to love this release and have applied a 1 bottle per person limit on the purchase of it on both caller door and online purchases with the intention to spread these bottles to as many homes as possible this Christmas. The inspiration for Noel comes directly from a beer I had on a trip through Wallonia in 2015. I slipped across the border into France to visit Xavier Bailleux at his family brewery, Au Baron in Gussignies. While I was there, I tasted their Biere de Noel 'Saison Saint Médard' made in time for Christmas each year. Up until that point, I had never experienced such a flavour filled malt character in a beer. It wasn't sweet or cloying, just bursting with fresh red berries and dried fruit notes. I love making and releasing this beer as a reminder of those few days as well as beer friendships worldwide. Noel 2020 at release shows an impressive balance for such a high ABV and rich beer. It is deep in flavour yet light on its feet. You can expect aromas of caramel, raisin, sweet oak and red fruits with chocolate, toffee and cherry flavours on the palate all coming to a pleasing finish that is neither sweet nor sour. A really beautiful beer. #noel #wildflowerbeer

06.01.2022 Not my best photographic effort, eh, whatever... making a grand reappearance tomorrow with our June releases is Too Easy: Motueka, this time brewed with fresh @freestylehops from NZ. This beer is a combination of lessons learned. Too Easy is a mixed culture, barrel fermented bitter Australian Wild Ale heavily hopped with Motueka (NZ) throughout the boil, in fermentation and dry-hopped before packaging. For Too Easy, we attempt to reign in on the hop volume of these individual... techniques while merging their usage and stymie our house culture's souring nature by hopping the wort in barrel at the same time as pitching our yeast slurry. It has been some time since we last visited this idea. When we received the fresh 2020 crop of Motueka from Freestyle Hops in Upper Moutere, NZ we smelled the hops and decided to rebrew this beer. These hops were so delicious and bright, we had to see how they preformed. It was brewed with malted barley, wheat and oats in late November 2020. We hopped it across the boil and in whirlpool to 40 IBU before barrel fermenting it in a puncheon and dry-hopping in barrel immediately at fermentation. After a two monthlong fermentation, we hopped once more and packaged it in green bottles and allowed it to condition for three months. At release its aroma is hop dominant, fruity pear, watermelon and sherbety citrus. Wet stone and curry leaf complexity. Bright, punchy and lifted. The palate is compact and intense. More earthy spice to complement the hoppy fruit characters. Mandarin and lime core leading to a ginger, bitter lemon finish. This is a tiny, tiny bottling with a single keg to pour at cellar door. It will be available solely online and at cellar door, sorry no wholesale. Other newbies tomorrow include Foggy Morning Blend #4, Hive: Post Brood Blend #2, Good as Gold Blend #13 and Amber Blend #31. Tomorrow at noon .

05.01.2022 BRIGHT SIDE Our collaborative project with Ravensworth wines in Murrumbateman using smoke ‘tainted’ grapes from the 2019-20 bushfires will be released NATIONALLY on Friday 7 May. We will of course have them available at our cellar door and online but we will also be sending them to our stockists ahead of time so that you can pop along to your local and join in on the release even if you can’t make the roadshow.
