I know my 12 years labour of love with a huge splash of blood, sweat and tears (and a worm farm the size of Australia), has come to a happy place . I will be offering my sourdough gluten free vegan low FODMAPs Bread mixes no corn/soya/gums/nasties - commercially in 60 stores (tba) around Australia very soon ... this is my breakfast this morning, a seedy roll (48hr retarded fermentation)... delicious nutritious heavenly .... gluten-free classes will be back in August both live stream and face to face (Perth)

07.01.2022 Sprouted chickpea Falafel: 500g chickpea dried, soaked for one day n sprouted (1-2days) to make 1kg, blitzed to a coarse consistency then add: Tons of parsley leaves, picked, blitzed 1 huge red onion, blitzed 1 head of garlic (6-7 cloves), blitzed ... 1 small cooked potato (mashed) 1tbs salt 1tbs cummin powder 1tbs coriander powder Put blitzed chickpeas, onion, garlic, spices, salt and put mixture in a large bowl then add 1/4-1/3 cup water and 2 tsp baking powder. Mix all by hand. Use 2 spoons or a falafel thingy and fry in olive oil mixed with rice bran or grapeseed oil, medium heat. See more

07.01.2022 Tang Zhong Marbled sourdough loaves from yesterdays Artisan class, dough more than tripled in tins. To do the marbling I roll a small chocolate TZ dough (added left over 1/4 cup ganache and 40g Dutch cacao powder) inside a large original TZ dough then cut in slices and shaped into rolls and into tins.
