11.01.2022 Amaro (Itallian for "bitter") Long before there were chef-driven cocktails, there were monk-driven digestivi, also known as amaro. They made us feel better, encouraged post-prandial discourse, and set us up for a better tomorrow.... Amaro is a liqueur made from over 25 potential ingredients: rhubarb, cardamom, orange, Chinese herbs, bark, peels, seeds, herbs, flowers roots, chamomile, mint, fennel, artichoke, licorice, eucalyptus, juniper, ginger, clove, anise, saffron, sage..., and many others. Distilled, macerated, or both in wine or another neutral spirit (often grape brandy), most amaro are granted a period of rest to better blend the ingredients. Some amaro are further aged in barrels, too. Amaro elixirs range in shade from honey to oil slick, with flavour ranging as widely too, from smooth and sweet, to smoky and bitter. 06.01.2022 Antica Torino Vermouth Rosso and Bianco Antica Torino is a partnership and project of passion between Vittorio Zoppi and Umbrian wine maker Filippo Antonelli. Rather than seeking out the exotic (and often imported botanicals) that go into more modern styled vermouth, Antica Torino is a step back in time to when vermouth was created with local fare and love of the craft. The decision was made to produce a vermouth that was "of the garden" and packed with fresh rosemary, bay ...laurel, thyme, oregano, wormwood, gentian, rhubarb, vanilla and more! For the grapes, they trialed numerous combinations, testing both white and red varieties from Piedmont. They decided to go with white wines, including a small percentage of Moscato for its floral elements. For colour, burnt cane sugar was chosen rather than industrial caramel and there are no colorants, clarifying agents, or artificial preservatives added. Crafted from a recipe from the 1950's, Antica Torino Bianco expertly blends herbs of the garden and mountain including absinthe, centaurea, hyssop, thistle and sage. Following maceration it is partially distilled and blended with Cortese wine to an elegant, floral and vinous vermouth. Dry vermouth is great on ice with lemon and makes a complex and distinguished Martini, shaken or stirred! Both of these classical styled vermouths can be picked up for $75.00 a bottle if you too would like a taste of the history books.
