05.01.2022 Hearty veggie curry. It’s been a while since I posted a recipe sorry, just been a bit busy! This was a delicious meal for us the other night after we returned from the snow. A whole lot of veggies, chopped (I used potatoes, Brussel sprouts, zucchini, carrot, eggplant, capsicum and snow peas) 1 onion, chopped 2 long red chillies, chopped 2 gloves garlic, finely chopped... 3cm piece ginger, peeled and grated 400g tinned chick peas, drained and rinsed 400g tinned tomatoes 140ml light coconut milk 1 cup vegetable stock 2 teaspoons garam masala 1 teaspoon each ground cumin, ground coriander and ground turmeric 1 sprig curry leaves Lime and coriander, to serve Melt some coconut oil in a large pan or pot, add the spices and fry for two minutes or until fragrant. Add the onion and fry until soft, along with the chilli, garlic and ginger. You may need to add a tablespoon of water to keep everything moving around the pan. Add any starchy vegetables such as potatoes, along with the stock and tinned tomatoes. Cook for about 7 min before adding the rest of the vegetables (except snow peas or beans), chick peas and giving a big stir. Add the curry leaves. Cover and simmer for another 10 min. Add the coconut milk and snow pears at the end and stir in, cooking for another 2-3minutes.
