06.01.2022 Pruning the trees all this week. We have about 1100 and it can be a really hard slog to get them pruned, so ,,, they haven't really had a haircut for years. This time they have been very severly coppiced to aid us in harvesting at a reasonable height . They have gone from big and very full of foliage, to savagely chopped! YIKES

03.01.2022 The colour of olive oil is due to three pigments, carotenoids, chlorophyll, and pheophytin. These presence of these, in varying amounts, make the oil vary in colour from light gold to deep olive green. Green unripe olives yield greener oil than do ripe olives because of the higher chlorophyll content. Our oil is usually a gold/green colour as we pick the olives when they are more ripe, and they then contain more yellowish-red carotenoids.
