He is a teacher at the Jamie Oliver Cooking School, and he is collaborating with Planet Eat TV, fil...ming episodes about the Italian culinary culture. Originally from the region of Sardinia, as a good Italian he has great passion for cooking, and when he moved to Australia at a young age he turned his passion into a job. Working alongside the Australian pizza champion, Francesco realised he has natural skills and decided to study the world of pizza. A few years later he opened a Sardinian Pizzeria in Brisbane together with some friends, but unfortunately they had to close shortly after due to visa problems. This didn't discourage Francesco, who left Australia to start a new adventure on European soil, in the U.K. In England he found a stimulating and satisfying job without any visa restrictions, working shoulder to shoulder with celebrity chefs. Not only as a teacher or filming but also in writing a recipe book with famous chefs like Gordon Ramsay, for a new Charity Organisation raising awareness around mental health and suicide prevention. Francesco is the first in the U.K. to have the Piccolo pizza oven, he said it was Amore at first sight. He will show us here shortly what delicious dishes he cooks with his Piccolo oven! 19.01.2022 Want to try something different! Puccia Leccese, traditional panini bread from Puglia! Ingredients, yields around 6 Pucce Leccese - Bakers percentage in brackets 500 g bread flour - (100%)... 3 g yeast - (6%) 225 mL lukewarm water (55%) 20 mL milk (4%) 10 mL oil (2%) Pinch of sugar Coarse semolina for coating Method Add the yeast and sugar to the water, stir and just allow it to rest for a few minutes. To a bowl, add your flour and mix in the salt. Pour in the olive oil, milk and yeast water mixture. Bring the dough together with a fork. When it becomes difficult, get your hands in there to form the dough into a ball. Pour the dough out onto a lightly floured surface and knead for about 10 minutes or until the dough is smooth. If using a stand mixer, add dry ingredients to wet ingredients and mix until the dough is smooth. Cover in the bowl and let it rest for 15-20 minutes. Cut the dough into approximately six 120g balls and shape them like you do with pizzas. Lightly coat them with oil and cover them until doubled in size. Pre-heat your oven to around 350C. The Puccia Leccese is supposed to bake using a similar temperature and flame to the Pizza. Take each dough ball and lightly flatten them. Lightly cover the bottom with semolina. Bake in the preheated oven until it has puffed up and is golden brown on top with darkened bits on edges. 13.01.2022 Pizza with Zucchini Flowers If you have zucchini or pumpkin growing in your garden, start picking the flowers as they are even more delicious then the zucchini or pumpkin! Pick them in the morning and keep them in a container in the fridge until you have enough for your pizza (s), you can keep them in the fridge for about a week.... The recipe: do not put tomato on this pizza dough, but use mascarpone or sour cream instead. Then put some shredded mozzarella. Undo the zucchini flowers from the stems by holding the top of the flower in one hand and pulling the green bottom part softly with the other hand. This way the thicker green part and the stem inside come away. spread the flowers out evenly covering the whole pizza, sprinkle a tiny bit of mozzarella again and spoonful of pine nuts. Bake of in your wood fired oven, and sprinkle some fresh grounded black pepper when it comes out. As a variation you can add a little bit of blu cheese to the sour cream, mix it well and proceed as above. (You can let it sit in the fridge overnight or ev...en freeze it for up to 1 month) While the octopus is resting at room temperature, drizzle some olive oil over it and add some chopped garlic cut the tentacles and grill it over medium-high heat for 3-4 minutes per side.
