19.01.2022 Cabernet Franc In 1700 s Cabernet Franc alredy have is reputation in the Loire Valley , at these times the variety grape was known as, Bouchet, it also became ...famous for giving the birth to Cabernet Sauvignon, when was crossed with Sauvignon Blanc. It continue to gain in popularity in USA expecially in California, Napa Valley, Washington State and Oregon, is also planted in Italy, , Spain, Australia, New Zealand, Argentina, Chile, Hungary, Canada, Bulgaria, Croatia and most recently China. Cabernet Franc grapes are often used as blending grape than as a single grape wine, and there are few winemaker outside of the Lorie Valley and USA, which have success producing wines from 100% Cabernet Franc. Today Cabernet Franc lost in popularity, in start of the 20th century. it reach the Cabernet Franc about planted surface, but still remains one of the world’s top 20 most popular grape varieties, and has its own holiday, International Cabernet Day every August 30. Despite Cabernet Franc shares the DNA with Cabernet Sauvignon, there are many differences between the two grapes variety, the first ripens earlier around one week, and prefer slightly cooler climates and find his favourite soil in stony, chalky and sandy terroir, as consequence to global warming, in Pomerol and Saint Emilion area is growing the surface of cabernet franc vineyard. Fot all these reasons cabernet Franc gained its highest accolades in the right Bank of Bordeux, where Chateau Cheval Blanc, Chateau Ausone, made this grape shine. The wine made by Cabernet Franc is not fleshy as Merlot and have less tannic structure than Cabernet Sauvignon, have a deep color, and the berries have a thin skin, and when raise a good maturation, they confer a wide range of aromas as floral, plum, blackberry, cassis, spice and fresh herb. When the berries don't have a full ripeness, the wine shows notes as green pepper or green vegetal aromas, but the rule is that, wines with a significative share of Cabernet Franc are difficult to taste, assess and appreciated when young. Usually Cabernet Franc gives its best when paired with the right food as roasted or grilled meat (chicken, pork, beef, duck, sausage, lamb, veal) also with some hearty fish dishes, and it match well with hard as well as soft cheese. Today the Right Bank Bordeaux has the highest concentration of Cabernet Franc vineyard, here the variety represent the perfect blending grape for Merlot, it is also planted in the Left Bank where has is role in the blend with Cabernet Sauvignon, where the two grapes produce excellent complex and elegant wines, becouse they enhances each other. 17.01.2022 WINE TANNINS Most of us have at least heard of wine tannin. But what is it, exactly? And how does it affect our perception of wine? Tannin is a naturally occur...ring polyphenol found in plants, seeds, bark, wood, leaves, and fruit skins. Polyphenols are macromolecules made of phenols: complex bonds of oxygen and hydrogen molecules. (Yep, wine is science!) The term tannin comes from the ancient Latin word for tanner, and refers to the use of tree bark to tan hides. You’ll find tannin in the skins, seeds and stems of grapes. It’s also found in oak barrels. What Do Wine Tannins Taste Like? Tannin in wine adds both bitterness and astringency, as well as complexity. It is most commonly found in red wine, although some white wines have tannin too (from aging in wooden barrels or fermenting on skins). Need an example? Put a wet tea bag on your tongue. 50% of the dry weight of plant leaves are pure tannin. Other foods with tannin: Tea Leaves Walnuts, Almonds, and other whole nuts (with skins) Dark Chocolate Cinnamon, Clove, and other whole spices Pomegranates, Grapes, and Açaí Berries Are Wine Tannins Bad For You? No: in fact, wine tannins are likely good for your health. There is actually a study on the effects of wine and tea tannin and oxidation in the body. In the tests, wine tannin resists oxidation whereas tea tannin did not. In other words, it’s an antioxidant.
