23.01.2022 Today is International Whole Grain Day! International Whole Grain Day celebrates the benefits of wholegrains on nutrition, well-being and sustainability, for healthier people and a healthier planet. Studies show that eating whole grains instead of rened grains lowers the risk of many chronic diseases. For example, last year’s Whole Grain Initiative Panel highlighted how increasing one’s daily intake of whole grains to 30-40g reduces the risk of cardiovascular disease by up... to 20%. This disease places a massive burden on our health care systems and economies, not to mention our communities. As the Wholegrains Council outlines, other benets of whole grains most documented by repeated studies include: * reduced risk of stroke * reduced risk of type 2 diabetes * reduced risk of heart disease * better weight maintenance * less inammation * lower risk of colorectal cancer Of course, this is all in the context of an overall healthy diet. But we think if you’re going to enjoy bread, baked goods, pasta, etc. make sure there’s a strong wholegrain component in there. We only produce 100% wholegrain, single pass stoneground flour from Certified Organic grain. This means that the nutritious and flavoursome bran and germ isn’t sifted out or stripped off as it is with white flour. By producing wholegrain flour, we also don’t have to deal with a waste product. As Dr Stephen Jones from the Bread Lab has said, If you’re a farmer and you grow 100 pounds of wheat, only 70 of it is going to be made into food. If you wanted to raise the yield of wheat tomorrow, just eat the whole kernel. #wholegrain
23.01.2022 Sourdough purists look away! This is the gateway bread we used to make back at uni. We usually bake sourdough twice a week but when the kids are sick and weve forgotten to make a leaven, yeasted rye and honey bread is our quickest option to get lunch on the table. Its 100% wholegrain and approved by our discerning soon to be 3 year old! 400g Rye Flour 500g Spitfire Bread Flour 7g Yeast... 1 tsp Salt 2 tbsp Honey 725 ml Warm Water 1. Combine flours with salt and yeast in a bowl. 2. Combine warm water and honey and pour over flours, mixing to form a sticky dough. Tip out onto a floured bench and knead for 5 minutes. 3. Rest in bowl for 1 hour or until doubled in size. Preheat oven to 200C and place a tray of water on the top oven rack. 4. Knock the air out of the dough, shape and place in a lightly floured tin. Leave to rise 30 minutes, then place in oven. Bake for 30 minutes, remove tray of water and bake for another 10 minutes. Let rest in tin 10 minutes. 20.01.2022 So it looks like our beloved khorasan isnt actually khorasan afterall. We purchased some khorasan seed a couple years ago to grow on our farm and our bakers have thoroughly enjoyed the flour we produced. However, it turns out that the seed we purchased is a type of triticale- a wheat rye hybrid that was developed in the late 19th century in Scotland and Germany. We feel a bit ripped off that someone sneaky somewhere along the line has marketed triticale as the ancient gr...ain khorasan, and were very sorry that we too have been misleading our community without realising. But we know that this grain is still a bloody beauty, with flavour and baking properties that we and our bakers have come to know and love. Weve nearly run out of our triticale supply for flour this year, and it looks like we wont be harvesting anything due to the drought (and the fact that we experimented with direct drilling it into a rye grass laden paddock ), but well be re-sowing our triticale next year with the confidence that our bakers and community will get behind it. On this weeks episode of @rosestreetpantry we meet Ian and Courtney from @woodstockflour A young couple making us rethink the way we view the humble bag of flour. Established in 2016 Woodstock Flour has a focus on wholegrain, stoneground flours from grain grown on Ians family farm Woodstock in Berrigan, NSW. Wo...odstock has been in Ians family for four generations and has been Certified Organic for 24 years. The farm integrates sheep, cattle and various crops on a beautiful 2000 acre property in the Southern Riverina. Ian and Courtney both wanted to work on the land and saw farming as a means for environmental restoration and community building. They also saw an opportunity to provide their community with fresh flour of known provenance, which wasnt common at the time. After testing the waters with a small bench top flour mill at farmers markets, they imported a New American Stone Mill in early 2018 and have since been supplying freshly milled flour to bakeries, restaurants, shops and families in their local region and across Victoria! 18.01.2022 Hello home bakers! Weve been thinking about setting up a Community Supported Agriculture (CSA) model for some time now... As @ausfoodsov explain, CSAs vary in their structure and payment terms, but the principle is that farms supply their produce directly to their members through a subscription model a commitment from the eater is made to accept the produce they are given and to share the risk of the harvest with the farm. Were thinking a monthly flour and grain subscript...ion, including recipe ideas and baking tips, might be of interest to some of our customers. We would need to work out how to deliver the subscriptions affordably (aus post isnt really an option) and we would need to determine what sized shares would be most suitable. But ultimately, we see CSAs having massive potential in supporting regenerative cropping- encouraging our customers to learn to bake with the whole crop rotation (legumes, rye, etc. not just wheat) and taking their share of what yields best. In return, we would be providing healthy, delicious and affordable food on a regular basis. Let us know if this is something you might be interested in. Were very open to ideas and suggestions! X

10.01.2022 Ians Mum Jenny @woodstock_farm is writing a book about Woodstock! Watch this space.... Woodstock the book. This month it has been 100 years since my grandfather, Harold Bawtree Webb came to manage Woodstock. It was an Estate of 7,500 acres at that time. He purchased the home block in the thirties and it has continued to be farmed by his family ever since. Over recent years I have gathered stories, photos, newspaper clippings and compiled a history of this land. I am writing about the happenings on Woodstock through the seasons and years. I will also include recipes of favourite foods we have enjoyed at Woodstock. 06.01.2022 COMMUNITY SUPPORTED MILL Our Community Supported Mill (CSM) is a membership model which allows us to share the abundance and risk that comes with producing food, running a flour mill and regeneratively managing the landscape. Members sign up to receive a monthly diverse share of freshly milled flours and grain. This commitment ensures that our entire harvest and crop rotation is accounted for and provides us with a level of financial security to continue refining our syste...ms in the mill and on the farm. Were starting small with our immediate local community- Berrigan, Barooga, Mulwala, Corowa, Howlong, Albury and Holbrook addresses only. Due to the Covid19 border closure we cannot deliver to Victoria. One share for this season is 5kg/month over 4 months for $140 (including delivery). The subscription runs from September to December 2020. Shares will be delivered contact free to your doorstep on the third week of each month. Shares will vary slightly each month but will mostly include 2kg spitfire wholewheat bread flour, 1-1.5kg rosella wholewheat cake flour, 0.5-1kg of spelt flour, 1kg rye flour, and 250g whole grains. Shares also include recipes, baking tips, our CSM newsletter and occasional flour and grain samples.
