07.01.2022 Sticky Date Pudding Recipe There is nothing quite like sticky date pudding in winter. Head Chef Cath Kalkas is nothing short of amazing. Try it out this weekend. Trust us- you will love it! Ingredients... Pudding 270g pitted dates 450ml water 11/2 teaspoons bicarbonate of soda 250g castor sugar 100g butter 3 eggs teaspoon vanilla essence 250g self- raising flour Butterscotch sauce 150g castor sugar 60ml water 50g butter 300ml thickened cream Special equipment 10 small metal moulds or muffin tins (buttered) Method 1.Preheat oven to 160C fan forced 2.Combine dates and water in a pot and bring to the boil 3.Sieve and whisk in bicarbonate of soda. Let cool 4.Cream castor sugar and butter in mixer or with beaters 5.Add eggs to butter and sugar one by one mixing well in between 6.Add vanilla, mix well 7.Sieve in flour mixing well then add dates combining with a metal spoon 8.Fill moulds full and bake in oven for 20 mins For sauce 1.Stir sugar and water together in a pot over medium heat until sugar is dissolved 2.Keep at a simmer stirring constantly until it turns a caramel colour 3.Once caramel is achieved add butter and cream and simmer until all ingredients are combined 4.Serve over individual puddings with ice cream Enjoy!
