22.01.2022 The humble sardine. It's one of the most integral parts of the entire planets food chain... And it's delicious. Best eaten whole, just poke your finger into its underside, drag its insides out and it's ready to cook. It's massively high in omega 3 and is pretty much a fish superfood. With it's very strong sea flavour it's more for the adventurous diner. Try tossing the whole fish through seasoned flour, grilling and serve with lemon and salsa verde. Perfect! 12.01.2022 Like meat fish is best cooked bone/s in. A whole fish can be baked, deep fried, pan fried, BBQ’d or steamed. While it’s more effort that simple fillets the taste reward is far greater. A favorite of ours here at the Wharf is whole John Dory or Dusky Flathead pan fried in sea urchin butter. Finish with a healthy dose of chopped parsley and fresh lemon and you’re in seafood heaven. 05.01.2022 A throwback to our beautiful fish trap being made. It was made by artists Bonny Burarn.gara and Freda Ali Wyartja in the Maningrida community in the NT. The trap had to be kept wet in local streams to alllow the weaving of the materials. The trap is our tribute to sustainable fishing methods and to all traditional custodians of this land and waterway who maintained and managed it for thousands of years. Such a special treasure.
