24.01.2022 Western Wednesday . We have been walking the local airstrip this week!! It’s been so good for the kids to run wild and the sunsets are just gorgeous! . 24.01.2022 Meal Prep Monday . I spent a little bit of time today organising my fridge. . I started by cutting up the veggies we will need this week! I find this helps keep us on track! I have no excuse to not be able to cook veggies as they are already prepped! This is great after a busy day at work! It also means I have time in the afternoon to spend with the kids ... . I also washed some mixed lettuce leaves and baby spinach, made a coleslaw and boiled some eggs for my salad during the week! This makes for super easy lunches! I usually just cook some extra meat the night before and then I am set for the next day’s lunch . I cut up watermelon - this makes it easy for the kids to come home from school and grab a quick snack! . I also marinated some pork chops for dinner one night! . Being prepared means I am setting myself up for success! I don’t have any excuses to eat crappy food, buy extra food from the shop or bail on going for a walk because I ‘need time to prep dinner’. . 23.01.2022 Super Sunday (one day late!) . I thought I hit post yesterday but apparently I didn’t . The first time we have ever grown anything!! Wow!! That counts as a super Sunday to me!!! ... . The tomato bush is flourishing! We have so many tomatoes on the vine - we don’t even eat tomatoes - Ben does - so he will be all tomatoed out!! We did have 3 capsicums but the birds got to two of them. Spinach and parsley are AMAZING. . I now know why people grow their own veggies! The thing about living in a small town is that you can trust your 9 year old son is going to be alright riding his motorbike up to the aerodrome by himself while you follow behind a little while later! .
