21.01.2022 New recipe Nourishing, hearty and creamy vegan Cauliflower Soup. Free from gluten, dairy and soy. Non vegan option included. Perfect accompaniment for these cooler days. It evaporated really quickly in our growing household. My 13 year old boy had four servings! Ingredients 1 medium cauliflower broken into smallish equal pieces... 4 medium size onions cut into quarters 3 potatoes peeled and diced 1 litre of milk - our family choice is rice Olive oil Herbed salt Pepper 1/2 cup to 3/4 c nutritional yeast Croutons - diced pieces of our Boys & Berrie Treats Original bread crisped up in your favourite oil. 1 cup fried off bacon bits (non vegan option) Method On a large lined roasting tray arrange your cauliflower and onion pieces. Drizzle with olive oil and herbed salt. Place in preheated oven 160 - 180 c Roast until soft and slightly browned. Can take up to an hour. Place diced potatoes into a large saucepan cover with water. Boil until soft. When cauliflower and onion has finished roasting. Tip them into the saucepan with the potatoes. Use a spatula or egg flip to include all those delicious browned oily bits off the bottom of the tray. These tasty morsels are imperative for this soup as they are full of flavour. Continue to simmer for another 15 mins. Add 1 litre of milk and nutritional yeast. Mix together. Check if more salt and pepper is required. Take off heat and we use a whizzer aka bar mixer to puree all those delicious flavours together. Taste again for salt and pepper. As an optional extra I fried off bacon bits and some of our cubed pieces of Original Bread to use as croutons. See more

14.01.2022 My top tip for making your Christmas Cake extra delicious. Once it's been lifted hot from the oven. Brush one to two tablespoons of your favourite tipple (rum is a great choice) or fruit juice, all over the top. Generously drizzle so the flavours steep down into the cake, leaving it looking glazed and moist. Ensure there is a nip for yourself for doing such a marvellous job. 13.01.2022 When an omelette turns into scrambled eggs kinda day. Fast, easy and tasted amazingly flavourful. Glutenfree, dairyfree and soyfree. Added lots of tidbits from the fridge. Ingredients 8 eggs, 1/2 c of rice milk, 2 pinches of herbed salt, coleslaw, finely sliced spinach, a couple of handfuls of spiced rice (serious taste sensation), 1/2 block of cubed dairy free feta and cooked veges. Method... Crack eggs and whisk together, add milk and salt, whisk again. Add a tablespoon of nuttulex to your hot frypan. Once melted pour in the egg mixture. Start layering the rest of the ingredients onto the egg. Turn the heat down to low. Continue to cook with a lid on the frypan until the egg is set on the bottom then gently moved the eggy curd around until it was has cooked through. Serve and enjoy See more
