25.01.2022 Today is an exciting day! We made a tiny batch of this variety in 2019 and the resulting 55 dozen is now in bottle. We wont be releasing this wine for a little while as we are looking for some bottle age, but its exciting to have it one step closer to being ready to drink #nebbiolo #xowineco #smallbatch #handbottled #madewithlove

22.01.2022 New wine alert 2021 was the vintage that we tried a few new and exciting things. The first to hit bottle is our Pinot Gris (skin contact). For the wine nerds out there, we used carbonic maceration for a portion, the second portion was fermented on skins and then pressed into oak and a conventional fermentation for the final portion. The result is an amber wine with texture and complexity, whilst still retaining the varietal characteristics for Pinot Gris. 22.01.2022 What a beautiful morning for bottling our 2020 Sauvignon Blanc the grapes for our Adelaide Hills SB normally come from a beautiful vineyard in Kenton Valley (near Lobethal), but unfortunately this vineyard was badly affected in the fires last December. We were very fortunate, however, to be able to get our hands on some wonderful Sauvignon Blanc fruit from a great vineyard in Kuitpo. 06.01.2022 You like Chardonnay? So do we!! our 2019 Chardonnay is a pretty serious wine. It’s from a beautiful vineyard in Kenton Valley (northern Adelaide Hills), hand picked at optimal ripeness and then whole bunch pressed in the winery. We press it directly into oak and it undergoes fermentation in the barrels. We only make two barrels and one of them is new oak, the other barrel is older. It stays in barrel for about 9 months, before we bottle it. It’s a complex, fuller bodied style with plenty of texture and it is ageing beautifully we will be pouring our Chardonnay along with the rest of the range this weekend at @gatheredsa, so make sure to call in and have a taste #Chardonnay #adelaidehillswine #xowineco #smallbatchwines

That is why we make the majority of our wines in a really delicate style, however our McLaren Vale Shiraz is a little more traditional.
