08.01.2022 Why do crustaceans change colour when cooked? A crustaceans shell or exoskeleton contains several pigments which interact and give crabs and prawns their colour. One of these is a red-orange pigment called astaxanthin, which is found in microalgae, yeast, salmon, trout, krill, shrimp, crayfish, crustaceans, and the feathers of some birds. Conversely, crustacyanin, which is only found in the exoskeleton of crustacea, is a blue pigment.... When the crustacean is alive, the astaxanthin is tightly bound by a crustacyanin, making the crustaceans look bluish-grey. Once you put a crab or a prawn in a pot of boiling water or on a grill, the heat denatures the crustacyanin pigment but not the astaxanthin, turning the shell of the crustaceans bright red.

Currently it is worth over $1 billion dollars and is expected to exceed $1.3 billion by 2021. Compared to China, Indonesia and India, who produce more than 80 million metric tonnes combined, Australia only produces 0.24 million tonnes. ... Amongst this, prawns are the largest internationally traded fish commodity (in value) and the top-selling seafood item globally. China, India and Indonesia are the largest prawn producing countries. However, in recent years production has been affected by persistent and sporadic diseases and unfavourable weather events. Through careful fisheries management and modern aquaculture techniques, including aquatic pathogen testing, will ensure Australia's competitive advantage in the marketplace and sustainable long-term growth.
