25.01.2022 | RECIPE OF THE WEEK | Peanut butter breakfast bar What you need:... 3 small ripe bananas cup dried apricots, softened in water and drained cup crunchy or smooth peanut butter, plus cup for the top 1 tsp vanilla extract 4 tbsp maple syrup 1 cup rolled oats cup almond meal cup flaxseed meal 2 tbsp chia seeds tsp ground cinnamon tsp salt What you do: 1Preheat the oven to 180C (fan-forced 170C). Grease and line a 20cm square baking tray. 2Puree the bananas and apricots in a food processor until smooth. Add cup peanut butter, maple syrup and vanilla extract, pulse to combine. 3In a large bowl, mix together the rolled oats, almond meal, flaxseed meal, chia seeds and ground cinnamon. Pour the peanut butter mixture into the dry ingredients and mix well. The mixture should be moist but not runny. 4Spread the breakfast bar mix into the prepared baking tray and smooth the surface. Bake for 20 minutes. The middle should be firm to the touch and the edges lightly browned. Remove from the oven. 5Spread the remaining peanut butter on top of the bars. Bake for another 10 minutes until the peanut butter has little bubbles in it. 6Cool completely on a wire rack and sprinkle with extra chia seeds, cut into bars. They can be stored in an airtight container in the fridge. #yarraiga #howthelocalslikeit

Preheat the oven to 180C. Line a 30 x 20cm baking dish with baking paper. 2. In a bowl, combine the cake mix and melted butter to form a dough. Spread the dough evenly in the baking dish and bake for 15 minutes. 3. Meanwhile, combine the apples and sour cream. Spread evenly over the base and return to the oven for another 15 minutes. 4. 22.01.2022 | RECIPE OF THE WEEK | Banana Chi Pancakes What you need: 1 cup wholemeal self-raising flour... tsp salt tsp salt 1 banana (puree) 1 tbsp maple syrup 3 tbsp plain yoghurt cup oat milk or milk 2 tbsp chia seeds Zest and juice of 1 orange 2 tbsp maple syrup 1 cup blueberries What you do: 1 Stir the orange juice, orange zest, and maple syrup together. Set aside for later. 2 Mix the flour and salt together in a bowl. Add the eggs, banana puree, maple syrup, yoghurt, chia seeds and oat milk, whisk together until everything is combined. 3 Heat a nonstick pan over a medium heat, grease the pan and pour about cup of batter to make each pancake. 4 Cook for 3-4 minutes, when the batter forms bubbles on the top, flip the pancakes over and cook for another 2-3 minutes until cooked through. 5 Gently mix the blueberries with the sauce. 6 Plate up the pancakes and top with berries and sauce. We asked their lovely founder, Alison, what inspired her to create her brand and here's what she shared with us. ... "I was inspired to create Feed For Thought by the majesty of Antarctica. I’d been working there for six summers and in that time witnessed the change brought about by the way I live my life at home. Every time I returned home from the Antarctic, I’d go for a walk with my dog, Max, and think about what I could do for this planet and the places I’d fallen in love with.That’s when I decided to use a sustainable source of protein to create food for Max. 07.01.2022 | RECIPE OF THE WEEK | One-Tray Mediterranean Chicken Roast What you need:... 8 chicken thighs or breast fillets 200g semi-dried tomatoes 100g pitted Kalamata olives 8 spring onions, halved What you do: 1 Preheat oven to 180C. In a large bowl, combine chicken, semi-dried tomatoes, olives and shallots. 2 Transfer to a large baking tray and spread in a single layer. Roast for 40 minutes or until the chicken is done. 3 Rest for 5 minutes before transferring the chicken to a platter and scatter with the roasted vegetables. 4 Drizzle with a little of the juice that results from baking. 06.01.2022 | RECIPE OF THE WEEK | Peanut Butter & Chocolate Shards What you need: 200g white or dark chocolate, chopped 1 cups (450g) smooth/crunchy peanut butter... 200g leftover chocolate, chopped Pinch of salt What you do: 1 Line a 20 x 30cm baking tin with baking paper. Find two bowls, and in the first melt the white chocolate and peanut butter together in a microwave stirring every 30 seconds until nice and creamy. Pour the mixture in the baking tin and spread evenly across its base. 2 In the second bowl, repeat the process with any leftover chocolate, stirring every 30 seconds until smooth. Drizzle this chocolate over the peanut butter mixture. 3 With a knife, cut through in swirls. Refrigerate until set, then cut into shards to serve. Into pan juices, add onions, cooking until golden. 3 Sprinkle with sugar and toss to coat, lowering heat to caramelize, 5 minutes. 4 To serve place sausages then top with the caramelised onions and tomatoes. Glaze the pork continuously for 4 minutes, turning, being careful not to burn. 3. Transfer the pork and juices to a bowl, cover with foil and rest for 3 minutes before serving.
