17.01.2022 My first attempt at baking fresh fish dish in the oven today turned out pretty good. The inspiration came from a dish I had in a small seaside town called Dahab in Egypt many years ago which to this day I have not forgotten. Do you remember any food from your travels that you would love to have today?

08.01.2022 Snowy Mountains to South Coast (NSW, Australia) road trip highlights: We are always keen to get away from the rat race of Sydney and venture out to quieter places in nature. So this holidays we decided to do something different. Instead of doing the usual planned trips, staying in hotels and visiting popular places, we decided get off the beaten path (challenge our 4wd), visit remote areas and camp...with our toddler!! We were warned it wasn't a good idea, we did it anyway. ...We were glad we did as a great adventure was had by all three of us. We visited many national parks, countless remote beaches, found ourselves in company of no one many times, had visits from wild animals (some that spooked the hell out me), met interesting people and even climbed Australia's highest mountain peak carrying our little one (happens to be the easiest mountain to climb). None of which was planned. We did have our challenges which became good learning for the next trip. It reminded us to be open and flexible when things don't go as expected like bad weather, booked out camp sites (Xmas time not a good idea!!) or wild animals getting to close for comfort. The aim was to travel cheap (although buying all the initial camping gear and 4wd accessories did cost a fair bit but we saw it as a good investment for future adventures). We ended up spending a lot more by staying in hotels during thunderstorms, eating out more then we intended etc (had to try the local cuisine). The trip also pushed us to tackle our own inner issues as well as learn to work more as a team. It definitely wasn't easy with a toddler, but it proved you can go out, have unique adventures and fun even with a toddler (she happens to have the same passion for outdoors like her parents which made it easier). I thought I'd seen enough of this country and needed to venture overseas to experience unique and beautiful places. This trip however taught me that there are incredible places to visit right in our own backyard and a cheaper way to travel (one that allows greater freedom as well). Here are the highlights of our trip. I've included a map of the roads we travelled. I'd encourage you to find your own paths as well. That's part of the adventure P.s - A lot of places we visited were unspoilt and beautiful. We want it to remain that way so please be mindful to take care and not leave rubbish etc behind. Enjoy!! What are you doing to live your life fully? Go out and do what makes your soul smile!! Life's too precious to not enjoy it or wait for things to happen to then enjoy. Make every moment count now!

06.01.2022 Stockton Beach, Australia. So we visited this gem last weekend as part of our escape-the-citylife-and-goto-nature weekend adventures. I've had some incredible desert experiences like camping and camel riding in the Sahara desert. I thought I had to leave the country again to have the unique desert experiences. ... To my pleasant surprise, we visited this amazing little oasis with beautiful sand dunes not too far from home. And it was peaceful and quiet. If that wasn't enough, as a bonus it was next to the ocean!!! (my favourite place to be). We were also able to drive along it. At times, we were the only ones there for as long as the eyes could see and we loved that (especially seeing too much of crowd and traffic in our daily lives). Definitely going back there for sunrise and sunset and proper photography. My only complaint was not having more time to spend there. If you visit this place, as always please take care of the environment. Make sure your 4wd is not leaking oil etc. We want to preserve the beauty and health of nature best we can.

05.01.2022 Mustang, Nepal. While reading a book about the disappearing tribes, I recently learnt that Mustang (where one of the tribes live) in Nepal is one of the most remote regions of the world. This got me reminiscing of my time in Mustang back in 2009. I realise even more now how lucky I was to visit this place which I hadn't originally planned to do. I couldn't agree more how remote it was. It was also one of the most peaceful and spiritual places I have ever been to from all my ...travels around the world. It was truly unique. The scenery was magnificent with grand snowy mountains and untouched nature. The sights of monasteries and monks in remote places was surreal. I think I was the only tourist there at that time. There was an air of incredible peace and quiet. Every moment I spent there was amazing and peaceful which I will never forget including riding a horse along one of the most breathtaking sceneries I have ever seen. I hope this place always remains as peaceful and magnificent as my time there. What seemed like a tough time getting laid off my job due to Global Financial Crisis (unable to find work elsewhere at the time) turned out to be one of my greatest adventure and blessing as I wouldn't have taken the trip otherwise. You just never know where life takes you from the adversities you face today. Best thing we can do is make most of it and look it as an adventure or opportunity to do something greater.
