16.01.2022 [ fish tacos ] 400g firm white fish like snapper cut into bit size pieces 375g tin coconut cream 1/4 green cabbage sliced to shred... 1 corn cob, corn sliced off 1 brown onion sliced 1 lime zested & juiced 1 clove garlic chopped Dash white wine (optional) Spices: 1tsp cumin, turmeric, coriander seeds 1 cinnamon stick toasted & ground with salt Tortillas, warmed Sides: avocado, coriander, lime wedges Sauté the onion soft in a little olive oil add the spices stir thru cook 5min until beginning to caramelise add a garlic 1min then add cabbage & corn cook a few minutes to soften add a dash white wine (optional - delete this step otherwise) reduce then add fish & tin coconut cream juice & zest of a lime stir to combine allow to simmer 10-15min so everything melds & the liquid reduces so it sticks to the ingredients. Serve with avocado fresh coriander lime wedges & warm soft tortillas. Makes enough for 8 tortillas #youngmodern
