25.01.2022 Slow-cooked, fall-apart tender Lamb Shanks. Perfect for these cold, wet, windy, winter nights. Our chef puts these in the oven at 5 in the morning so that they have heaps of time to slow-cook during the day, till the meat is ready to just fall off the bone. Tenderly cooked in a vegetable sauce with home-made beef stock, tomatoes, carrots, onion, celery , red wine, garlic, rosemary, thyme and bay leaves - these shanks taste just like home made - only you haven't had to lift a ...finger. A little comfort, and just what you deserve after a hard days work (maybe even with a glass of red?) (TIP: These can be reheated in the oven in minutes, but to retain that fall-off-the-bone tenderness and get them at their absolute best, we find that it's best to defrost them in the fridge the night before, and then just zap them for about 3-4 minutes when you're ready to eat.) www.dinnersready.com.au



24.01.2022 Lunch today: Confit Duck Poke Bowl. Using our own confit duck (which really, really is as good as you’d get in a restaurant!) this is ready in a flash. And super-healthy. We popped the duck in the oven for 10 minutes to warm through, under a hot grill for another 5 for the skin to completely crisp up and then shredded it all with a fork. Super tender and tasty. While that was happening, we threw some fresh crispy baby lettuce into a bowl, added avocado, cucumber, rad...ish and some kimchi together with some brown rice we had in the fridge (pre-cooked with turmeric and ginger) We added the shredded duck to everything in the bowl, and tossed on a little olive oil, and a splash of some fabulous local apple cider vinegar we found at @tanbella_orchard (We went there a couple of weeks ago to pick our own apples. Nothing like fresh, crisp, juicy apples straight of the tree! A great morning out. So lucky to have this on our doorstep.) 22.01.2022 What's for dinner tonight? This is ours... Classic Cottage Pie (with prime Aussie lamb and beef), topped with oven-crisped creamy mash and served with pan-roasted baby carrots (in butter and black pepper) and a scoop of peas. Perfect for a cold night in.....

12.01.2022 Caramelised Pork with Asian Pickles and Rice. The latest authentic dish from our new Singaporean chef (joining our Beef Rendang and Malaysian Chicken Curry). The pork belly is cooked twice so the fat is completely rendered down and the meat is super tender. It's then tossed in the Asian caramel sauce - adding a lovely caramel-chewiness and flavour to the meat (and the rice that soaks up the sauce). The pickles add balance to the flavours and textures. While there is chilli in the recipe, it's not at all overpowering. It just adds to the flavour and gives a background warmth. 10.01.2022 Our chef puts these lamb shanks in the oven at 5am, and allows them to slowly cook for hours till fall-apart tender. They are cooked IN our traditional tomato and vegetable sauce, so that all the natural flavours develop and deepen over time. Just like you would at home if you had the time. We use only the best produce: Prime Aussie Lamb, that’s been french-trimmed by hand. The sauce is made to a traditional recipe, and includes our own stock, tomato, garlic, with rosem...ary, thyme and bay leaves. (And, of course, red wine.) The oil we use is Tuscan olive oil. Our Slow-Roasted Lamb Shanks come in a double pack (to share), and also in a single-serve (one shank served with our creamy mashed potato). The shanks are gluten-free and dairy free. The single serve is gluten-free (because of the butter and cream added to the mash). The perfect winter warmer, and very healthy and nourishing as comfort food.

You can’t travel to Italy at the moment, but this dish will make you feel as if you’re there. We start by hand-making the fresh pasta and then form it into perfect parcels of ravioli, filled with Ricotta, Spinach and the best aged Grana Padano from Italy. They’re gently cooked till al dente, and then covered in a generous sauce made from tomatoes, béchamel, garlic and basil and finished with a sprinkling of grated aged Grana Padano.
