13.01.2022 Red meat can be divided into 2 tough cuts and tender cuts. Tender cuts are, that’s right, tender. The tough cuts are tough but when cooked properly will end up more flavourful and, in many cases, more tender than the tender cuts. Tough cuts are cheaper (than the tender cuts). If you can get just as good a result (or, if not better) then why not pick up a tougher cut? Save your $$$ and cook delicious tender meat meals from the tougher cuts. 02.01.2022 While you are grilling or pan frying, turn your steak: After you have browned your steak on both sides on a high heat, lower the heat to gently cook the interior and turn it few times. This can speed up the cooking time while still on a low heat. More importantly, it allows the juices to flow around the interior of the meat to ensure even cooking. ... Another important point is that you are also making sure that the exterior of the meat doesn’t over brown while you are gently cooking the interior.
