15.01.2022 Snack Ideas? Try this! GREEK YOGURT ZUCCHINI BREAD INGREDIENTS... 2 scoops Vanilla Fuze 1/4 cup coconut oil 1/4 cup rice syrup 1 egg 1/2 cup plain Greek yogurt 1 cup gluten-free flour 1/2 cup coconut flour 1 tsp baking powder 1 tsp bicarb soda 1 tsp cinnamon 1 cup grated zucchini (squeeze all juice out) 2 tsp orange zest 1/4 cup chopped walnuts Coconut spray oil METHOD 1. Pre-heat oven to 200c 2. Whisk oil, egg, yogurt & syrup in a bowl. In another bowl mix all dry ingredients together. Then pour wet ingredients in with the dry ingredients. 3. Mix in zucchini, nuts & orange zest, fold gently dont over mix. 4. Spray your baking tin, and pour in, bake on 180 degrees for 40-50 mins. Delicious

14.01.2022 OMG first night Coops slept through last in weeks! YAY!!!! Hard times at the minute he at the is usually up for 3-4 hours minimum every night My poor little man has lots of meltdowns daily, hes changing so much its so hard to watch him be aggressive, sad, emotional, wound up, compulsive - you name it. But l am so grateful for his team of therapists being so supportive we are getting there! What a prep year for Coopa loopa as well ... COVID19 for 6 months staying at home (literally ) hasnt helped him at all but what can you do! My house has taken a thrashing badddd omg Keeping special needs kids home from there school, activities & even parks it is so difficult for them to understand! Its hard for all of us, but trust me try and explain it to a non verbal severely autistic developmental delayed by 4 years, ADHD & in a 6 yr old & built like a 8 yr old. Its hard - the punches the kicks the hair pulling the biting! But how l look at it there is always someone else out there worse off! Keep your chin up & keep smiling Thanks Em & Kayla you girls have been awesome, so supportive, caring, helpful to Coops & myself in these hard times especially! We cant thank you enough WE CLEARLY HAVE THE BEST EVER SPEECH & OT THERAPISTS! WE WOULD BE SERIOUSLY STUFFED WITHOUT THESE LEGENDS! I love these girls so much! Chop all ingredients to your size likings and mix all together in a large bowl. 2. Heat and spray pan with oil on stove. Once pan is hot, pour mixed bowl and cook the bottom for a few minutes or until you see edges of the pan the egg white are slightly cooked. 3.
