13.01.2022 We’re pretty pumped about this one! After 7 months ageing in oak barrels, we’re finally getting to the pointy end for our beer/wine hybrid with @gilbertfamilywines. Made using 700kg of smoke affected Shiraz grapes from our good pals in Mudgee, and 1800L of pale wort with grape marc from this same pressing - a truly wild fermentation went down before ageing in barrels during lockdown, and now this wonderfully complex beverage will be coming to you soon! Now time to rest these ...babies for bottle conditioning before we unleash them back into the wild.
