24.01.2022 Let's talk about Yum Cha The ways in which dim sum is served has varied over the years. The traditional method, known as teoi ce ("push-cart"), dates back to the early 1960s, when dim sum items were pre-cooked in advance in the kitchen and brought out into the dining area in baskets by the restaurant employees. Later on, pushable trolleys with a heated function (often using gas) were used, allowing more items to be brought out at once. Staffs would call out the items they w...ere carrying, and a customer who want to order items would then notify the server, who would place the desired items on the table. This allows the customers receive hot, fresh items quickly and is efficient during periods of high patronage. Nowadays, many dim sum restaurants have instead adopted a paper-based à la carte ordering system. This method allows only those items which have been ordered to be prepared in the kitchen, reducing the need for leftover as well as minimizing waste food or ingredients. YUM CHA Cuisine uses both approaches to serving, making use of push-trolleys and switching to on-demand ordering during peak hours. The cost of a meal was traditionally calculated by the number and size of dishes left on the patron's table at the end. In modern yum cha restaurants, dim sum servers mark orders by marking a card on the table.

13.01.2022 Char siu literally means fork roast. 'Char' being fork and 'siu' being roast - named after the traditional cooking method for the dish: long strips of seasoned boneless pork are skewered with long forks and placed in a covered oven or over a fire.

05.01.2022 CHRISTMAS PARTY TIME

01.01.2022 You must be familiar with the Chinese egg tarts if you like Cantonese dim sum. Whilst the barbecue pork bun is the signature of the savory dim sum, the most lovable dessert will be none other than the Chinese egg tart. Chinese egg tarts are derived from the Portuguese pastel de nata from the times when the Portuguese arrived at Macau at the turn of the twentieth century. Since Macau is just a short boat ride from Hong Kong, the locals had modified the original Portuguese egg ...tarts and served them along with other Cantonese dim sum. The best Chinese egg tarts are made from the Chinese puff pastry, which is slightly different from the western puff pastry. This pastry is less oily than the western version with a more floury flavor. Traditional pastry chefs used lard to make this pastry, but recently many bakery and dim sum makers have changed from lard to butter, which is healthier and has a universal flavor.
