23.01.2022 I had a thought today, why not experiment with making naan bread in my pizza oven? But not how all the YT videos show you how they do it. All of them cook it just like they would a pizza. I however, will attempt it in a very different way. Stay tuned, this could be a real winner or a total flop. :)

21.01.2022 Egg Drop Soup For a very easy and tasty meal and very healthy for the body, give this soup a try. 2 chicken thighs/bone in and skin on 1 or 2 litres of chicken stock home made or store bought 3 eggs beaten well... 2 or 3 large slices of ginger 3 or 4 whole spring onions 1 extra spring onion for garnish 3 r 4 mushrooms 2 tsps corn flour 1/2 tsp tumeric 1/2 tsp white pepper 1 to 2 tbps rice wine vinegar sesame oil to drizzle salt and pepper Egg Drop Soup In a dry pan, fry the thighs skin side down to render the fat out and turn the skin nice and brown. Add the stock, the ginger pieces and the spring onions (whole) after bruising well. Bring to a simmer and cook for 20 to 30 minutes until the chicken is cooked through. While your chicken pieces are simmering away, brown your mushrooms until good and brown. Remove the chicken, set aside to cool. Remove the ginger and spring onions. Shred the chicken meat off the bones and add back to pot. After mixing your cornflour and tumeric with a little water, pour into pan and stir until thickened to your liking. Slowly drizzle in the egg and your done. Laddle into bowls, sprinkle chopped spring onions and browned mushrooms to garnish and black pepper.Finish off with a drizzle of sesame oil. See more

17.01.2022 Beef Stroganoff was one of my favourites. And like Grandma's meatloaf, there are a thousand different versions. Pretty confident you'l like this one. >>>Beef Stroganoff <<< 1 to kilo beef chuck cleaned up & cubed 2 large brown onions... 500g mushrooms sliced 1 liter beef stock 1 tbls corn flour slurry if needed 1/4 tsp cumin tsp white pepper 1 tbsp Worcestershire 1 cup sour cream Olive oil With your burner on high, fry off the beef. Because you’re stewing with so much in the pan at one time, the moisture will come out of the meat. Keep on high until all moisture is evavporated and you hear it start to fry. Turn down heat to brown. At this point, the beef is tough as leather (not to worry) but caramelizing at this stage is important to add flavour. Add the onions just as you think your beef is almost ready. The onions will have softened somewhat. Add your beef stock, Worcestershire, spices and bring up to a very slow simmer. This will take from 2 to 3 hrs. An hour or 2 in, brown your mushrooms and add to beef. When the beef is melt in the mouth tender, add the sour cream. If needed, add (a little at a time) the corn flour slurry until desired thickness. Note: I salt along the way from tasting as I go See more

16.01.2022 Who else cooks like this? I'll purchase 10 chooks and do the butchering myself. I buy dozens of eggs and ricotta to make several quiches in one go, freeze most of them.Or purchase a dozen cabbages when cheap and make sauerkraut. Here, I am making several quiches (large and small) along with an apple pie and many small ones. If I were to go the market and shop like I do regularly, I have no doubt now, people would look at me and accuse me of hoarding with their eyes.... Did I mention I sneeze al the time from hayfever! LOL See more

10.01.2022 Pizza tonight was a sort of West meets up with East. I wanted to maintain a basic pizza dough, as apposed to egg or rice flour pancakes in the East. The evening was a resounding success with the Vietnamese lemon grass infused chicken pizza coming if first. Though, the Chinese sticky pork belly and Korean orange gochujang chicken pizzas where still a stand out with their incredible flavours. https://www.youtube.com/watch?v=0luj19QitIw

09.01.2022 For a few years now, I've been involved with numerous Face Book cooking groups and a common fear I see on a regular basis is, so many are in fear (to some degree) of cooking something and failing. Not being able of producing a chef quality dish like so many others on these cooking groups so they just don't even try. That's the sad part for me. 02.01.2022 Nope, it doesn't always go to plan. Nearly set my head on fire! My idea of making naan in the pizza oven turned out a total flop and I certainly won't be trying it again.
