(even though I ran out of gas half way through ) and served over shredded spinach dressed with lemon zest and OOO, zatar/honey roasted pumpkin (skin on) and carrots, parsnip & grilled broccolini and asparagus...with a probiotic yoghurt/garlic & lemon dressing...so good! #mondaymeals
