23.01.2022 Sunday Pizzas with friends. After challenging myself with recipes like Duck and Ravioli, I thought I should try an easy meal and include Zest in my newfound food adventure. So here is what I did. The Base... I used a pizza dough recipe from the @taste_team website which was really easy. Then I added about 2 large tablespoons of the @muttipomodoroau tomato paste to approx half a jar of Zest Moroccan spice paste to add a little extra flavor to the base. The toppings, I coated some cut up pumpkin in a splash of Zest Indian spice paste and roasted them for about 20 mins in a hot oven. I also lightly stir-fried some chicken pieces with about 1 tblspn of the Morrocan spice paste and some sesame seeds for the meat lovers. Buffalo mozzarella, normal mozzarella, was the cheesy factor with some baby spinach and pine nuts used for both pizza toppings. The meat lovers also had slices of delicious @salumi salami and fresh ham from @clunesbutchers, I was meant to add mushrooms but forgot! So yummy and so easy. You obviously will add whatever toppings you like but sometimes adding a little bit of zest to your cooking adds a whole new dimension to what you make. 11.01.2022 Chairman Mao's Red Pork recipe. I purchased Adam Liaw's Destination Flavour recipe book from @thebookroomcollective in Byron Bay and was immediately keen to try this dish. I am so glad I did. It was absolutely delicious and well worth the time to make. I still have a few issues following recipes though but heh, it all worked out in the end. 07.01.2022 Way back in February this beautiful Wagyu and Rosemary skewer was served at an incredible long lunch with family and friends at Restaurant Paper Daisy located in the stunning boutique accommodation that is @_halcyonhouse Cabarita Beach.
