18.01.2022 Z K I N F O O D Now that the weather is cooler in the evenings, enjoy this light but super hearty vegan #ChickpeaCurry high in protein and full of antioxidants and anti-inflammatory nutrients. This plant-based curry is so easy to make and will keep you satisfied for hours. ~ Ingredients (Serves 4)3 cups cooked organic chickpeas2 cups organic tomatoes (chopped roughly)2 garlic cloves (chopped finely)1 teaspoon red chilli powder2 1/2 teaspoons coriander1 tablespoon Him...alayan salt1 cup unsweetened coconut milk ~ Method 1. Preheat oven to 300 degrees 2. Put chopped tomatoes and garlic in a pan. Sprinkle on fenugreek leaves. 3. Cook in the preheated oven for one hour then remove and let the mixture cool. 4. Put cooled mixture into a blender with red chilli powder, salt and coriander. Puree until smooth. 5. Strain chickpeas and put in a large bowl. Set aside. 6. Combine pureed mixture with coconut milk in a large pot. 7. Bring mixture to a boil over medium heat, stirring every 5 minutes so it doesn’t burn. 8. Pour hot mixture over chickpeas. CUPCAKES 1 cup almond meal 1 scoop Sunwarrior Chocolate Protein Powder cup raw cacao powder 1 tsp baking powder cup almond milk 1 tsp vanilla extract cup coconut oil, melted 2 tbsp raw honey 2 eggs FROSTING 2 cans coconut cream (800ml) 2 tbsp raw cacao powder 1 tbsp vanilla extract 1 tbsp maple syrup or raw honey Method CUPCAKES 1. Preheat oven to 180c. Place cupcake cases on baking tray. 2. In a large bowl combine almond meal, protein powder, cacao and baking paper. 3. Meanwhile in a small saucepan, melt coconut oil and honey and whisk to combine. Remove from heat, add almond milk, vanilla and eggs and combine. Add wet mix to dry mix and combine well. 4. Spoon mixture into cupcake cases and bake for approximately 25 minutes or until you can stick a fork and it comes out dry. 5. Allow cupcakes to completely cool before icing. FROSTING 1. Leave cans of coconut cream in the fridge overnight to set. Without shaking, remove lid of can and scrape out the hardened coconut cream (you can keep the left over coconut water for smoothies later on). 2. Add vanilla, cacao and maple syrup/raw honey and whisk or beat until well combined. 3. Transfer to icing bag and decorate cupcakes prior to serving.
