25.01.2022 How delightful | RHUBARB BARS | V & GF recipe by @dollyandoatmeal . . Ingredients: .... crust: . + 1 cup oat flour + 1 cup brown rice flour + 1/2 cup maple syrup + 1/2 cup extra virgin olive oil + 1/4 tsp sea salt . almond rhubarb filling: . + 2 cups almond slivers + 2 tbsp oat flour + 2/3 cup palm sugar + 1/2 cup extra virgin olive oil + 1/2 pound (6 large stalks) rhubarb, cut in half lengthwise . 23.01.2022 Some flavour for ya! | Skinny Baja Chicken Tacos recipe by @nourishandfete . . Ingredients: .... + 2 heaping tbsp plain Greek yogurt + 2 tbsp extra virgin olive oil + 2 tsp chili powder + 1/2 tsp garlic powder + 1/2 tsp cumin + juice of 1 lime + a pinch of kosher salt + freshly-ground black pepper + 500g boneless skinless chicken breasts tortillas, to serve . Possible Toppings: . + shredded red cabbage + shredded green leaf lettuce + pico de gallo + chopped avocado or guacamole + finely chopped cilantro . Chipotle Crema, optional, to finish: . + 1/2 cup plain Greek yogurt + 1-2 tbsp adobo sauce (from canned chipotle chiles) . . Steps: . 1) In a medium bowl, combine the Greek yogurt, olive oil, chili powder, garlic powder, cumin, lime juice, salt, and pepper to make the marinade. Whisk until evenly combined. Add the chicken breasts and flip so that each side is coated. Set aside to rest for at least 5-10 minutes. (See recipe note.) . 2) When ready, grill or saut the chicken for 3-4 minutes on each side in a skillet lightly misted with cooking spray over medium-high heat, until lightly browned and cooked through. Discard the marinade. . 3) While chicken cooks, gently warm tortillas and prepare other toppings as desired. Ingredients: .... + 6 tbsp rice wine vinegar + 4 tbsp dark soy sauce + 2 tbsp sesame oil + 1 tbsp mild olive oil + a sprinkle of granulated garlic or 2 gloves of finely chopped garlic + a sprinkle of red chilli flakes + 1 lb tofu . Steps: . 1) Mix all the ingredients bar the tofu in a bowl or whisk in a blender. Cover the bowl with foil and refrigerate for an hour or overnight ideally. Pour over the tofu and oven bake at 190C for 6 minutes. . 2) Serve with veggies or over rice noodles for the perfect plant-based lunch or supper. Ingredients: .... + 170g (2 cups) gluten-free oats use plain oats if you dont have an allergy/intolerance to gluten + 1/2 tsp salt + 1 tsp baking powder + 2 tbsp maple syrup or you can use any other liquid sweetener like honey, date syrup, etc. + 236ml (1 cup) milk of choice + 4 level tbsp (1/4 cup) almond butter (or any other + 2 tbsp flaxseed + 5 tbsp warm water + 75g (1/2 cup) blueberries (frozen or fresh) + 1 nectarine, sliced + Handful of pecans, roughly chopped . Method: . 1) Prepare the flax eggs by mixing 2 tbsp milled flaxseed with 5 tbsp of warm water. MARSHMALLOW BUTTERCREAM: . + cup butter room temp + 1 - 7 oz jar of marshmallow whip + 1 cup powdered sugar + 2 tsp vanilla extract . GARNISH (optional): . + Wilton Jimmies in Blue or any sprinkles you wish . Steps: . 1) Pre-heat oven to 375 degrees F . 2) Line two cookie sheets with parchment, set aside. . CAKE COOKIES: . 3) Place all ingredients in the bowl of mixer. . 4) Start mixing on low and work your way up to medium speed. . 5) Mix for about 2 minutes. Scraping down sides and bottom of bowl as needed. . 6) Scoop out cookies onto cookie sheets, spacing 2 inches apart. MARSHMALLOW BUTTERCREAM: . 9) In bowl of mixer begin by creaming the butter. . 10) Add in the marshmallow cream, continue mixing. . 11) Add in the powdered sugar one spoonful at a time. . 12) Add in the vanilla. . 13) Mix until completely combined. . ASSEMBLY: . 14) Match up your cookie pairs. . 15) Pipe buttercream onto one cookie of each pair leaving a inch edge. . 16) Gently press the top cookie on top of the buttercream to make a sandwich. . 17) Spoon sprinkles around the edges or pour sprinkles into a shallow bowl and roll the edge of the cookie in the sprinkles. Ingredients: .... + 1 and 1/4 cups garbanzo bean flour + 1 and 1/2 cup water + 1/4 tsp salt + 1/4 tsp garlic powder + 1 cup hummus + 1 avocado, sliced + 1 cup shredded carrot + 4 handfuls Dole Organic 50/50 Mix + hemp ranch dressing for topping . Steps: . 1) In a blender, combine the garbanzo bean flour, water, salt and garlic powder. Blend on high until smooth. Allow to sit while you heat the skillet. . 2) Lightly grease a large non-stick skillet and warm over medium-high heat. Pour in 1/4th of the batter at a time and cook until the edges start to bubble, about 3 minutes. Carefully flip and cook the opposite side until firm. Cook for an additional 1-2 minutes until yolks are cooked as desired. . 2) Meanwhile, toast bagels as desired. . 3) On each bagel, spread half of the cream cheese on one slice, and half of the romesco on the other slice. Steps: . 1) Place the ricotta cheese into a fine mesh strainer and place it in the fridge to drain for at least 12 hours and up to 24 hours. . 2) When youre ready to make the filling: . 3) In a large bowl combine the drained ricotta cheese, confectioners sugar, 1/4 cup of the mini chocolate chips, vanilla extract, and orange zest (if using); mix well. Using a spatula, carefully scrape the mixture into pastry bag fitted with a 1/2 inch open tip. Use at once, or refrigerate until needed; filling can be made up to 24 hours in advance. . 4) When ready to serve, pipe the filling into one end of cannoli shell, filling shell halfway, then pipe into other end. Ingredients: .... + 14-inch Rectangular Tart/Quiche Pan Crust/Topping + 3 packages Original Tim Tam Biscuits, separated + 2 tbsp unsalted butter, melted . Filling: . + 1 and 1/4 cups heavy cream + 3 large egg yolks + 2 cups semi-sweet or dark chocolate chips, whatever your preference is + 1/4 tsp fine sea salt + 1 tsp pure vanilla extract . Steps: . 1) Preheat the oven to 325 degrees F. Lightly grease a the tart pan with cooking spray. Place it on a large tray and set aside. . 2) In a powerful blender or food processor, add all of the Tim Tam Biscuits from both packages. Pulse/blend until the biscuits are crumbs, In a bowl, combine the biscuit crumbs and melted butter. Stir until combined. Press the mixture firmly into the bottom of the greased and prepared pan and up all the way to the top of the sides. Bake for 10 minutes and then remove onto a cooling rack and cool completely. . 3) Whisk together cream and egg yolks in a saucepan. Heat over medium-low heat, stirring constantly, until mixture is very hot (but NEVER boils) and thickens slightly. Remove the mixture from the heat and stir in the chocolate chips until completely melted and mixture is smooth. Stir in the salt and vanilla extract. . 4) Pour the chocolate mixture into the prepared crust and then refrigerate for 3 hours. . 5) After the chill time is finished, remove the tart from the fridge and use the remaining 1 package of Tim Tam Biscuits to add the final layer. Space the biscuits evenly on top and press in gently. Cut into bars and enjoy! . 6) Return any leftovers to the fridge. Only add Tim Tam biscuits on top to the slices that will be eaten the same day. Ingredients: .... + 1 1/4 c chopped dark chocolate + 1/4 c Truvia or granulated sweetener or choice + 3 tbsp coconut oil, melted + 2 eggs, large + 3 tbsp unsweetened cocoa powder + 1 tbsp unsweetened special dark cocoa powder (can sub for all regular unsweetened cocoa powder) + 1 tsp vanilla extract + 1/8 tsp sea salt + more for sprinkling . Steps: . 1) Preheat oven to 350 F and prepare an 8x8 inch pan with parchment parchment paper both ways. Leave an overhang for easy removal. . 2) In a microwave safe bowl, melt the chocolate and coconut oil together until smooth. Set aside to cool. . 3) Meanwhile, in a mixing bowl, stir together the cocoa powder, Truvia and salt. Add in the eggs and vanilla and stir until combined. FOR CRUST AND STREUSEL TOPPING: . + 1/4 cup ground flax + 1/4 cup warm water + 2 cups almond meal + 1/2 cup coconut sugar + 1/2 tsp salt + 1 tsp baking powder + 1/2 cup melted coconut oil + 1 tbsp almond extract + 1 cup rolled oats + 1/2 cup oat flour . FOR FILLING: . + 2 cups cherries, pitted + 1/4 cup coconut sugar + zest and juice from one lime + 1/2 cup chopped semisweet chocolate . Steps: . 1) Preheat the oven to 350 degrees. . 2) Place ground flax and warm water in a bowl and stir to combine. Let sit for a few minutes while you measure out other ingredients. Combine almond meal, coconut sugar, salt and baking powder in a food processor. Add coconut oil, almond extract, and flax mixture. Blend. Separate half of dough into a bowl, stir in rolled oats and set aside. Add oat flour to food processor with remaining dough and mix until combined. Transfer dough from food processor into a tart pan with removable bottom. Press dough out with fingers until it forms even layer on bottom of pan. Transfer to bowl. Add coconut sugar, lime zest and juice and stir to combine. . TO ASSEMBLE THE BARS: . 1) Once the crust is cool, spread cherries evenly in the pan. Ingredients: .... + 2 cups all purpose flour + 3/4 cup white granulated sugar + 1/2 cup cocoa powder unsweetened + 2 tbsp baking powder + 1 tsp salt + 1/2 tsp baking soda + 1 3/4 cups milk + 2 eggs beaten + 1/4 cup butter melted + 2 tbsp liquid red food coloring + vegetable oil or oil spray for cooking small amount . Steps: . 1) In a bowl, whisk together all dry ingredients. . 2) In a medium bowl, whisk together eggs and milk. Slowly whisk in butter. Add red food coloring and stir until combined. . 3) Pour wet red mixture into dry mix. Beat with spoon until just combined. Do not over stir the batter or the red velvet pancakes will be tough. Let batter sit for 5 mins. . 4) Transfer red velvet pancake batter to a squeeze bottle dispenser with a fine tip. Use a funnel to create less mess. . 5) On a pancake griddle or non stick skillet, heat a little vegetable oil or spray pan lightly with non stick spray. Use oil sparingly. Heat to medium heat.
