25.01.2022 It has been an extremely hectic 2 months of B&B and med life! Yesterday marked the first day of a more steady pace at the B&B and Shan finishing up night shifts in anesthetics! We finally got to check out a new comer to the wine and foodie scene in NE Vic: Posh Plonk on Main A cellar door/restaurant set in an old Masonic hall in Chiltern: Posh Plonk is only a 15 min drive away from Rutherglen, and makes for a lovely long lunch treat!

23.01.2022 WE HAVE A SLAB! Our slab to our new home was poured this week! I always wondered why people bang on about the slab being poured - I now know why!! What a relief!! Shan and I will have our work cut out for us now, our extra set of hands: Shan’s dad is now in stage 4 lockdown in Melb. But we are ready for the challenge. ... We just need the border gods to still let our kit home to be delivered from Brisbane to us in a 2 weeks time!

14.01.2022 Sometimes it takes a tourist eyes to make you tourist in your own backyard! Some of our guests recently went on the North East Vic Silo trail, we never realised how close we actually were from them all! We had a spare few hours yesty and went for a drive to them check out. We were amazed with the stunning silo art and were delighted with the final art piece that was located at another new discovery: The Winton Wetlands. We thought this trail would be the perfect day trip for our guests wanting a break from wine touring. Oh and if you are a NE Vic local... you gotta check them out!!

07.01.2022 Stage 3 lockdown has me working on my newest international menu: Chile I must admit when I went to Chile, I found it hard to find their traditional fare, it was mainly burgers and hot dogs. So, I have been collaborating with my dear Chilean high school friend Veronica. She has generously provided me with some amazing traditional Chilean recipes to work through. Last night I experimented with Lentejas: Chilean lentil stew with a salsa verde served with Sopaipillas: a fried flat Pumpkin bread. It is most definitely a contender for my new breaky menu. It’s hearty, vegiful and the Sopaipillas are super moorish! #chileanbreakfast #covidcooking #bedandbreafast #rutherglen #chile

07.01.2022 Amberesque breaky to go! And they are off... the VIC and NSW boarder is finally open again after 19 weeks of being closed! My guests wanted to beat the busy Hume and got an early start. 04.01.2022 Amberesque and build update! Whoa!! Let me fill you in on the roller coaster few weeks we’ve had. Our booking calendar for July was looking jam packed and I was mentally gearing myself up to smash through another massive month... then the lockdowns started popping up from all around us and the cancellations came rolling in... I was so disappointed for all our amazing loyal regulars and new guests that we were looking forward to hosting. Our calendar was fortunately still open... to welcome Regional Vic guests and I felt very lucky to still be able to operate. We have had some lovely regional Vic guests over the last few weeks. In the mean time our house build at the rear of the property started, though it didn’t take long for us to stumble onto our first hurdle ... Or should I say stumble onto a sewer that was discovered when drilling the piers into the ground! The original 100 year old property plans weren’t as accurate as hoped.. For a time there we were worried this could have been a deal breaker for the build to even go ahead!! But with an entire shift of the house and reworking the design, we are now all systems go! While the building action was happening, last week we learned that the boarder closure between NSW and VIC was to be made even tighter and Rutherglen’s little bubble between the two states was removed. Whilst these restrictions didn’t impact greatly on our business and family this time, it has caused major disruption to many of our friends businesses and access to their families. We are more mindful than ever to support our loved ones that are at the brunt of it all. #supportsmallbusiness #especaillynow Amidst all the drama, Shannon turned 35 and while our original plans to celebrate couldn’t go ahead we definitely made up for it... We lunched at @miss_amelie_ this Wodonga wonder has been on the wish list for years and it didn’t disappoint! Our lunch was followed by our first family weekend to the snow at Dinner Plain. We tabogganned our lil tushes off, ate drank and were all very merry! Who knows what lies ahead for the next few weeks, I’ll be sure to keep you in the loop! 04.01.2022 Every guest has a story... and it’s why I do what I do... When one of my guests had written their story into a book, I just had to purchase it and understand more about their incredible story. I finally have had the chance to read it. Kaye’s mother was married to the pilot on board the infamous plane crash into Canberra on 13 Aug 1940 - which was not far from RAAF Fairbairn base I worked at. This plane crash not only altered Australian history, but had an ongoing life changing effect on Kaye and her family. 01.01.2022 Amberesque update... So much has been going on in the last few weeks, I finally am catching my breath to let you know what we have been up to! The last two months we have been chipping away with deep cleaning, upgrading the B&B such as new displays, air cons and creating covid safe alterations. Ever since Vic restrictions were lifted on overnight stays, I have been beyond overwhelmed with the enquiries for stays with us!! We are booked out all weekends in June/July and I hav...e only one weekend room left in August. Spring weekends are filling by the day... so if you are planning a visit, please get in touch asap! I am back in my element in full turbo B&B mode and this has been made possible thanks to Shan’s mum Robyn (aka Nanna!) she has stayed with us for the last week, to help Magnus and I adjust to full time work and mum life again. Shan has been non stop with work as always and has has been working very hard to get our new home at the rear of the B&B started on schedule. Yesterday we were thrilled to finally see the markings of our new home being laid out! We will keep you updated with our build progress and blunders along the way.

01.01.2022 A heartfelt Happy New Year everyone! We are hopeful for a bright 2021 for all our dear friends and family. We bring in the new year with wonderful news: The Amberesque team is expanding... we will have another member join us in early June! Clearly by this pic Magnus is not as thrilled as we are. The pressure is on now to have our house ready in time for our new arrival! Now to business:... With a toddler to keep up with and a baby on the way, as of 2021 I will be transitioning to hosting at a 2 night minimum. I will be taking Mat leave from early May to the end of Aug. From Sept onwards we are back initially hosting weekend bookings until we work out our rhythm as a team of 4! See more
