08.01.2022 Chickpea and Chocolate Fudge Cookies SERVES 15 | PREP 5 Mins | COOK 20 Mins Made in minutes, devoured in seconds and freezing them is a dream. These have to be the ultimate health biscuits - who would have thought that chickpeas are their secret ingredient? Ingredients... 1 can chickpeas (or 1 cups cooked chickpeas) cup crunchy natural peanut butter (plus extra for topping) 2 tbsp carob or cacao powder cup maple syrup or rice malt syrup 1 tbsp pure vanilla extract 1 tsp baking powder tsp sea salt Method Step 1 Preheat your oven to 180C and line 2 baking trays with baking paper. Wash and drain chickpeas well and place in a food processor with all remaining ingredients. Blend for a minute or two, until ingredients are well combined and the dough is smooth and creamy. Step 2 Using a spoon, scoop the biscuits into balls and place onto the baking trays. Press the biscuits down with your hands so theyre fairly flat and top with a small dollop of peanut butter. Step 3 Place in the oven and bake for 20-25 mins or until crispy. Serving Suggestion They will store for a week in an airtight container in the cupboard or fridge or for a month in the freezer.
