18.01.2022 Easy slow cooked beef recipe to make your day a little easier What youll need: 1kg of silverside beef... 2 Carrots (sliced round) 1 Brown onion quartered 2 Potatoes (cut into 4s) 1 Bunch of rosemary 1 Bunch of thyme 2 Tbs of EVO 1/2 Cup of red wine 2 Cups of water 1 tbsp Cornflour To help make thicker gravy Instructions: 1. Remove beef from the fridge 30 minutes before cooking and season with salt and pepper. 2. Heat the oil in slow cooker and sear the meat for around 4-5 minutes. Be sure to to turn the beef regularly to achieve a golden brown colour all over the meat. Once browned, remove the beef and put on a plate 3. Add the carrots, potato, onions and fry them until soft - around 2 -3 minutes. 4. Meanwhile, using kitchen string, take the rosemary and the thyme and tie them into a small bouquet garni. 5.Stir the red wine, and water into the slow cooker. Add the bouquet garni and bring to the boil. 6. Add the beef to the slow cooker and put the lid on. Set the timer to 6 hours. (It is important to turn the beef in the liquid around half way through cooking.) 7. Once the cooking is complete, simply remove the beef from slow cooker and cover with tin foil and allow to rest for 20 to 30 minutes before carving. Gravy The liquid that is left makes a wonderful gravy infused with beef flavours, red wine, and herbs. If the liquid is too thin, add some cornflower to thicken. It is best to make a paste using cold water and then add to the pot. This will thicken it up nicely to make the most delicious gravy

Fruit & Veg Hygiene Checklist: Delicate vegetables and fruits: For soft stuff such as tomatoes, ripe stone fruit and berries, rinse under a steady but low-pressure stream of water, turning the items gently with your hands to ensure all sides are rinsed but not bruised. Spread on a clean kitchen towel or paper towels to dry so they dont get crushed.... Sturdy vegetables and fruits: For items such as green beans, asparagus, and cucumbers, rinse well under a high-pressure stream of water while rubbing with your hands. Let dry in a clean colander if needed. Root vegetables: Since these grow in the dirt, theyre often quite, well, dirty. I like to scrub them under running water with my handy vegetable brush. 08.01.2022 One way you can utilise our kale is to make a kale and chickpea salad INGREDIENTS 6 cups kale, roughly chopped or torn... For the Chickpeas: 1 (15 oz) can chickpeas, rinsed and drained 1 to 2 Tbsp olive oil 1 tsp. cumin 1/2 tsp. chili powder 1/4 tsp. paprika 1/2 tsp. sea salt For the Dressing: 1/4 cup tahini 1/4 cup lemon juice 1 tsp. lemon zest 1 Tbsp honey (or maple syrup for vegan) 3 cloves garlic, minced 1 tsp. fresh ginger 2 Tbsp olive oil Salt and pepper, to taste INSTRUCTIONS Preheat oven to 200 degrees Celsius. Rinse and drain chickpeas, patting them dry using paper towels. In a large bowl, drizzle olive oil over chickpeas and add seasonings, tossing until chickpeas are completely coated. Spread chickpeas out on a prepared baking sheet and roast in oven for 25 to 30 minutes, shaking pan halfway through. While the chickpeas are roasting, whisk together tahini, lemon juice, zest, honey, garlic, ginger, olive oil and salt/pepper. 04.01.2022 How about turning this weeks beetroot and leek into a soup All you need is: 700g trimmed beetroot*... 2 tbs olive oil 2 leeks (white part only), halved lengthways, washed and sliced 400g Desiree potatoes, peeled and chopped 3 garlic cloves, finely chopped 5 cups chicken or vegetable stock Reduced fat sour cream and snipped chives, to serve Method 1. Preheat oven to 180C/160C fan-forced. Individually wrap beets in foil and place on a baking tray. Roast for 50-60 minutes or until tender when tested with a skewer. Carefully remove foil and set beets aside to cool. Wearing rubber gloves, peel beets then roughly chop and set aside. 2. Heat oil in a large saucepan over medium heat. Add leeks, potatoes and garlic and cook, stirring occasionally, for 4-5 minutes until leeks soften. Add beetroot and stock, cover and bring to the boil. Reduce heat and simmer, stirring occasionally, for 20 minutes or until potatoes are tender. 3. Using a hand-held blender, blend soup until smooth. Season with salt and pepper to taste.
